For the Date & Banana Cake:
Ingredients
1 & 1/2 bananas, ripened at room temperature
3/4 cup vegetable oil
1 cup brown sugar packed
3/4 cup granulated sugar
3/4 cup coconut milk, unsweetened at room temperature
1/2 cup plain yogurt at room temperature
1 cup Natural Delights dates of choice chopped, plumped, and drained.
2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
Method
Preheat oven to 350 F
1. Rehydrate the chopped dates first (they need at least 10-15 minutes to sit in hot water).
2. Combine dry ingredients except granulated sugar in a large bowl and set aside. Whisk for 20 seconds and set aside.
3. In another large bowl, mash up the bananas with a fork (or use a potato masher if you have one). Add in the sugars and oil and combine well with a whisk.
4. Use a blender on a smoothie setting (or similar setting if you are using a processor) to combine the dates, yogurt, and coconut milk. This will result in a slightly chunky mixture because of the date pieces.
5. Add the blended mixture to the other wet ingredients and whisk them together. Slowly add the dry ingredients and mix well. Be sure to scrape the bowl down a few times.
6. Line a 9 x 5 loaf pan with parchment paper to avoid caramelization, otherwise use baking spray to prepare pan. Fill the pan under 3/4 of the way full. Distribute appropriately to other pans if you filled a amaller loaf pan and have extra batter. Bake for 30-35 minutes, check with toothpick to make sure it is fully baked. Toothpick should come out clean.
For the Date Ice Cream
Ingredients:
1 can condensed milk *
2 cups heavy whipping cream
1 to 1 & 1/2 tsp vanilla extract
1/2 cup Natural Delights Dates of choice, chopped into small pieces
1/4 cup chopped pecans (optional)
Method:
1. In the bowl of of a stand mixer with a whisk attachment, add the whole can of condensed milk, the whipping cream, and the vanilla extract.
2. Whip on medium to high speed until fluffy, stiff peaks are achieved.
3. Pour into a freezer-friendly container and freeze for at least 2-3 hours before serving.
