Millets were a part of old Indian cuisine. Now-a-days, millets are in high demand and regaining the their lost charm due to their excellent nutritive values. Millets are not only good alternatives to rice and wheat but are also gluten free. I’ve been experimenting with millets lately and making sure to have them at least thrice a week. This Barnyard millet porridge is a low calorie meal which makes an easy and light dinner.

Servings - 1
Total calorie count - 255 calories
Barnyard millet - 150 cal
Non fat milk - 40 cal
Ghee - 25 cal
Mustard seeds - 40 cal

Ingredients:
1. Barnyard millet - 1/4 cup (can be replaced with Little millet or Kodo millet)
2. Water - 1 and 1/2 cup
3. Milk - 1/2 cup (can be replaced with water) - I used non fat milk
4. Green chilli - 1 (optional) or a small piece of serrano pepper
5. Carrot - Small piece
5. Salt - According to taste
Tempering ingredients:
1. Ghee - 1/2 tsp
2. Mustard seeds (Rai) - 1/2 tsp
3. Cumin seeds (Jeera) - 1/4 tsp
4. Black peppercorns - 1/2 tsp or according to taste
5. Asafoetida (hing/Inguva) - A pinch
6. Curry leaves - 4-5
Procedure:
1. Add water to a pot and add chopped carrot and chilli.
2. Add washed Barnyard millet and keep the flame on medium low. Cook the millets covered for 5 mins.
3. After 5 mins, keeping the flame on medium low, open the lid, add salt and mix.
4. Add milk and keep stirring. Cook it for 3-4 mins or until it thickens like a porridge.
5. On a medium low flame, in a tempering pan, add ghee and mustard seeds. Let the seeds splutter.
6. Add cumin seeds followed by pepper and curry leaves.
7. Incorporate this tempering into the porridge.
8. Close the lid, wait for 3-4 mins before serving.
Notes:
1. Do not use full fat or whole milk. It sweetens the porridge. I added non fat milk for slightly creamy texture. You can use water instead.
2. Do keep the flame on low when cooking the millets. We neither want the millets to get burnt nor overcook them.
3. If you can’t handle spice, please skip the green chilli part.
