Thank you so much for the tip to make it thicker. Learned the recipe from an orthodox family who took me in during hard times & wanted to surprise my girlfriend with some in the morning…. It’s been a while since I’ve made any

Hi Leonor- Good question. This can be accomplished by a slight adjustment in the way you roll each strand. If you make each strand a bit thicker toward the middle and thinner at the ends, your challah will have a fuller middle section. 💗

35 to 40 min? Is that due to the oven being non convection? Seems a bit long.

You are correct. I don't use the convection feature, just regular bake. And, it depends on the size of the loaf, how crispy you like the crust, your particular oven's dynamics.... So many factors can influence the baking time. Honestly, it takes a bit of trial and error to get it right. 😉

Hi! So sorry. Unfortunately, I don't know how to do a good gluten-free dough, but I am sure that there are others who do. I hope you find a recipe that will be helpful, and then come back for more beautiful braiding ideas. 💗
