This is the softest, creamiest, and most delicate cheesecake I've ever eaten. And it's easier and faster to make than New York cheesecake. The key is to bake it at high temperature for a short time. During this time, the top crust of the cheesecake may brown (burn), but inside, it remains very tender and soft, like cream or mousse. The main thing is to find the right approach for your oven and understand how much time it needs to bake in your particular oven to avoid overbaking. But even if you don't get it right the first time, trust me, it will still be very delicious, perhaps just a bit denser in texture in the center than intended. I experimented with my oven, baking at different temperature settings and for different durations. The most perfect result I achieved was at 250°C for 16 minutes. My only advice is to bake it immediately at a high temperature, not less than 225-230°C
🍫INGREDIENTS:
❗️All ingredients should be at room temperature! Take them out of the refrigerator beforehand!
- 400g cream cheese
- 200g heavy/double cream
- 120g sugar
- 15g corn starch
- pinch of salt
- 2 eggs
- 200g melted chocolate (I used a mix of 100g dark chocolate Callebaut 54,5%, and 100g milk chocolate 41% Alunga Cacao Barry ) You can use, for example, only dark chocolate that you like
- 50g espresso
If you don't want to add coffee, you can add an additional 50-70g of heavy/double cream.
The baking pan is 18 cm in diameter. Bake at 250°C for approximately 15-25 minutes. I baked it for 16 minutes.
