Beef Short Ribs are meatier than Beef Back Ribs, and typically have a good amount of fat marbled into the meat that will help keep them moist during the cooking process. Now let's get into how you can smoke them to perfection in your own backyard 👇
💨Ingredients:
Beef Short Ribs
2 Tbsp Mustard
Pit Boss All Purpose GSP BBQ Rub
🛠Special Tools:
All-Purpose Tin Foil Pan
Metal Baking Rack
Charcoal Igniter
🔥 Pellet Grill Set Up: We'll walk you through exactly how to set your Champion Barrel Smoker up to make this easy and delicious wood-fired recipe!
First, you're going to fill the charcoal basket with your charcoal of choice and light it using a charcoal igniter. Then, adjust the air intake and chimney to their minimum settings.
Once your grill reaches 250 degrees, you're ready to start smoking!
👨🍳 Cooking Process: In this episode of Backyard Bosses, we'll show you exactly how to make juicy and tender beef short ribs on your Pit Boss Champion Barrel Smoker.
First, preheat your Pit Boss to 250°F. Kara used the Pit Boss Champion Charcoal Barrel Smoker for this recipe, but you can use any grill or smoker.
Next, prepare your BBQ beef short ribs by removing the layer of hard fat along with silver skin underneath. Set your trimmings aside to use later. Removing the silver skin is optional, and depends on personal preference.
Layer mustard thinly on your short ribs. Then sprinkle your favorite beef rub evenly on all sides.
Take your trimmings and place them in an aluminum pan with a grate on top. We will render down these trimmings to make beef tallow to infuse our ribs with keep them nice and juicy.
Place your ribs on the grill grates and begin to cook.
Once the ribs have reached an internal temperature of 165°F, remove them from your grill.
Remove the grill grates, and place your beef short ribs down into the pan of tallow. Remove any large fat chunks and discard. Cover with aluminum foil and place back onto your grill. Smoke until they reach an internal temperature of 200°F.
Once your ribs have reached their final temperature, wrap a towel around the whole covered pan and place into a cooler or your microwave. Let rest for 1-3 hours, then enjoy!
🔥 Smoking Time & Temperature: Smoke at 250 degrees until you reach an internal temperature of 165 degrees. Then cover with aluminum foil, and smoke until you reach an internal temperature of 200 degrees.
