But raw vegan recipes are such an important part of anyone's diet. Fresh, raw vegetables are the healthiest foods on the planet!
I want to eat as many raw foods as possible, but I'm just as busy as anyone else. Here's a dish I make at least once a week. It takes just minutes to prepare and it gives me so much energy. I like to round it out with some flax crackers or a salad with walnuts in it. Here's the recipe:
Easy 5 minute Gazpacho
6 tomatoes chopped
Half cucumber chopped
1/4 cup chopped onion
1 garlic clove
Half lime juiced
1/4 cup water
1/4 cup ice
2 tsp piment d’espelette (or whatever dried chili spice you have, but this is the best one if you can find it)
Sea salt
Black pepper
Diced avocado
Diced tomatoes
Chopped scallions
Chopped cilantro
Blend all ingredients until smooth.
Pour in bowls. Top with black pepper, salt, chopped scallions, cilantro, tomatoes and avocado.
