BEEF AND TOMATO WITH RICE
Ingredients:
1/2 lb beef, thinly sliced
1 inch piece of ginger, peeled and minced
1 clove of garlic, minced
1 tbs soy sauce
1/2 tsp sugar
1 tbs Chinese cooking wine
1 tsp corn starch
1/2 tsp baking soda (sodium bicarbonate)
1/8 tsp black pepper
4 medium tomato, cut into chunks
1 tbs vegetable oil
1 tbs oyster sauce
1 tbs corn starch
2 tbs water
1 tsp sugar
1 green onion, chopped (for garnish)
Method:
1. Thinly slice the beef and marinade it with the minced ginger, minced garlic, soy sauce, Chinese cooking wine, corn starch and pepper.
2. Heat oil in frying pan on high heat, then stir fry beef until cooked. Remove from heat and transfer beef to a plate.
3. Using the same pan, add the chopped tomatoes and cook for 3-5 minutes until the tomato begin to cook down into a thick sauce.
4. Pour the tomatoes onto a serving dish and top with the stir fried beef. Garnish with the green onions.
5. Serve with rice or noodles.
