1 tsp black paper corn
2 tbsp fennel seeds
1tsp zeera
1 and half tbsp dhanya
3 star anise
1 black cardamom
2 green cardamoms
1 big piece of mace
quarter piece of nutmeg
1 cinnamon
2 bay leaves
1 tsp ajwain
roast all the spices for 2 minutes and grind well then to make nihari masala. now add half cup water 2 tsp salt 2 tbsp kashmiri red chilli powder, 2 tsp red chilli powder or according to your taste, 1 tsp haldee, 2 tbsp sonth powder and mix it all. nihari mixture is ready.
Roast 1 tbsp besan 5 tbsp aata together for 2 minutes and mix it with 1 cup water and keep aside.
In a pot pour 1 and a half cups oil then add beef 750gm to 1kg stir until color changes then add ginger garlic paste 2 tbsp. Stir for 5 minutes then add nihari masala mixture and stir well until oil separates. Take out all the oil from it.
Now add 5 dishes of water if you want 2 dishes prepared nihari. Bring it to a boil then add aata mixture and keep on stirring for 2 minutes. Then cook on low flame for 5 to 6 hours for best results. Add more water if required. In the end, pour the oil which was taken out, and garnish with ginger green coriander, and green chili served with lemon.
