Plate Ribs 2 Ways!
I cook a pair of Creekstone Farms USDA Coice plate ribs that, together, cost about $172.00.
One by of these two plates was larger than the other. On this, I used a pretty basic flavor profile of Diamond Crystal Kosher Salt, cracked black pepper (telicherry peppercorns), granulated garlic and Aleppo pepper (also known as Pul Biber.)
The smaller of the two I used as an experimental test bed. I started with the kosher salt and cracked pepper. I then mixed Vegemite with Lee & Perrins Worcestershire Sauce and instant espresso powder to make a syrup, which I poured over top. I then sprinkled on Isot Biber which is Urfa pepper flakes.
Both were smoked over maple wood.
