Ry, I’ve made the beef back ribs (leftover from the ribeye) and found them to be really rich. Not a ton of meat but even then the richness made it hard to eat too much. Do you think these ribs similar to that?

Ry. I love your cooks. I just never seen you use or make a mop sauce. Have you? I wouldn't do it on beef ribs but pork ribs, pork butt's, shoulders, and anything fatty I think is game. Even fatty chicken thighs deserve a good mop sauce if your doing a low and slow smoke. Turkey! That cherry coffee garlic rub pork butt you smoked on the Oklahoma Joe's would be a perfect candidate before being shredded into the tart cherry bbq sauce. Mopping sauce! Mopping sauce! Mopping sauce!

Ry, those ribs look amazing…I have a Weber kettle and want to try this immediately. Do you have any other advice for using the Weber kettle as far as positioning the ribs and keeping the temperature steady?

Any standard 2 zone setup will work. All it takes is time and temperature to reach tenderness 👍

Great timing as I needed a refresher video as I'm thinking beef plate ribs for next week. BTW, I'm curious as to whether taking off the silver skin would have made a difference. Sure, there's the smoke ring and seeing it makes it seem like more smoke flavor made it into the meat. Either way, I'm sure they're delicious!

I'm sure the fat discouraged smoke ring development, but leaving it really helps with moisture retention in my experience.

Id love to make these but i have no idea where to find them in my area. Food City, Food Lion, Kroger, and Costco are nopes. All they have is the version with no meat on top, just between the bones AKA rip off ribs.

I thought i'd try beef ribs.. turns out they are way too meaty for me.. and I love meat. Just a mouthful of pure beef lol not a fan of them at all.
