Welcome back guys & gals! On this cook, I smoke up some Prime Beef Ribs on my Yoder YS640. This cook too a total of 9 hours at 250° on the top shelf. I did increase the temperature the last hour to 275°. I wasn't going to wrap them but I needed to speed up the process. I did wrap in butcher paper to protect the beautiful bark my smoker had developed. These ribs are the best I've ever eaten by a long shot!
