A few years ago, my friend Debbie and I went on a vacation to Panama. On the plane ride over, we were served beef stew. I had never had beef stew before so when I took my first bite, I was instantly in love with it!. I was inspired today to make this after having shared memories with Debbie about our trip. I've tried to recreate that same taste …so today, on this cool, dreary, wet fall day, for me, there is nothing better than a comforting bowl of beef stew. Top your mashed potatoes with this beef stew….it'll soothe your soul ♥️ as it does mine
Ingredients: serves 4
2 tablespoons olive oil for the pan
3 pounds chuck steak or stewing beef cut into APPROX. 2 inch chunks
2 large carrots CUT into 1 inch chunks
1 large onion cut into 1 inch chunks
6 cloves garlic (divided)
salt and ground pepper
2 tablespoons flour
1 cup red wine
3 cups beef stock
2 tablespoons tomato paste
2 sprigs fresh thyme
2 tablespoons fresh parsley, finely chopped
2 bay leaves
1 pound fresh button mushrooms,
2 tablespoons butter
