Ingredients
For the Rice:
- 4 cups sela rice
- Water (for soaking)
For the Broth (Yakhni):
- 1 kg beef
- 3-4 garlic cloves
- 1 piece of ginger
- 1 cinnamon stick
- 1 piece of mace
- 1 black cardamom
- Nutmeg (a small piece or a pinch)
- 2 star anise
- Black peppercorns
- Cloves
- Cumin seeds
- 1 tablespoon dry coriander seeds
- Salt (to taste)
- 3-4 cups water
For the Pulao:
- 1 cup oil
- 3-4 medium-sized onions, sliced
- Reserved meat pieces (from the broth)
- Green chilies
- Reserved yakhni (broth)
- Soaked and drained rice
- 2 tablespoons vinegar
- 1 teaspoon garam masala powder
Instructions:
Soak the Rice:
Place 4 cups of sela rice in a bowl.
Add water and let it soak for about 1 hour.
Prepare the Broth:
In a pressure cooker, combine 1 kg of beef, 3-4 garlic cloves, a piece of ginger, a cinnamon stick, a piece of mace, a black cardamom, nutmeg, a star anise, black peppercorns, cloves, cumin seeds, 1 tablespoon of dry coriander seeds, and salt.
Add 3-4 cups of water.
Cook the Beef:
Seal the pressure cooker and cook on high heat until it reaches full pressure (whistle blows).
Lower the heat and cook for 10 minutes.
Strain the Broth:
Turn off the heat and let the pressure release naturally.
Strain the broth into a bowl and set aside.
Keep the meat pieces separate.
Sauté the Onions and Meat:
In a large pot, heat 1 cup of oil.
Add 3-4 sliced onions and sauté until golden brown.
Add the reserved meat pieces and sauté for 5-6 minutes.
Combine Ingredients:
Add green chilies and sauté until fragrant.
Pour in the reserved yakhni (broth) and let it boil for 10-15 minutes.
Add the soaked and drained rice.
Cover the pot and cook for 20 minutes.
Add Final Touches:
Once the rice has absorbed the yakhni, add 2 tablespoons of vinegar.
Sprinkle 1 teaspoon of garam masala powder.
Finish Cooking:
Lower the heat.
Cover the pot with a tight-fitting lid and cook for 30 minutes, or until the rice is fully cooked and all liquid is absorbed.
