For the salad:
6 pcs. beets
150 gr. feta cheese
1 bunch arugula
30 gr. pine nuts
for refueling:
1 clove of garlic
1 tbsp. l. balsamic vinegar
2 tbsp. l. olive oil
salt, pepper to taste
Provencal herbs - optional
Rinse and dry the beets.
Bake in the oven in foil.
Pine nuts need to be fried a little in a dry frying pan.
Peel the cooled beets and cut into pieces.
Prepare the dressing.
Pour it over the beets to marinate a little.
Cut the feta into cubes.
Add to the beets.
Top with arugula and stir.
Sprinkle everything with nuts and pour over the remaining dressing.
Very simple, but at the same time, the original salad is ready.
