My take away - 1. Everyone has different style of menu designing 2. Smell can add value to your profit margin 3. You get monitored all the time (like a lab rat) 4. Use of AI to design and create menu in premium restaurants. (I don't understand why consumer should pay higher price for a free AI product, where you can have less qualified Chef prepare high quality food using AI recipe )

@@shubhendumahapatra1532 - Why do you think you can't cook like him? Just practice the recipe with the quality of ingredients he uses for 30 days, you dish will be as good as his. you don't need to go to culinary school for years.

Hi Nikhil - enjoy your podcast. On the vegetarian %, something that you all missed was that even non veg eaters in India eat meat like twice a week. So 80%+ of meals in India are probably veg. This is the metric that matters.

In a physical business like this you’re unlikely to go compete with them unless you search for their restaurants and go open one right next door. So no harm in sharing knowledge. You’ll open a restaurant in your cuisine of interest in your area, so they’re not in any danger of losing to you.

They menu would have only numerals in price . they dont write rupees in front of those numerals. a rupee or dollor sign makes it look expensive.

I'm a Gen Z and when I went to my first cafe with a friend they told us to scan a QR which was far from the order counter and they were using a site or something of that sort which needed to create an account and it was f*cking buggy. They kept on insisting on scanning it again and again. I got so pissed from the experience that I decided then whatever happens I'm not gonna come to this cafe ever and it was quite a popular one in the area.

Nikhil is host, guests have more power in the equation. Guests will not want to share their trade secrets, Nikhil has to get something out of them to add value to the viewers. Viewers will get only what the guests share, mostly reluctantly. But actual value add never happens this way. This is never masterclass. It is only the top superficial 20% that is discussed by guests, Nikhil's team cannot go deeper than 20-25% because he doesn't habe domain expertise. Viewers spend X amount of time, but the quality or take aways are not equal to X amount of time's reading or research. My opinions completely, you can disagree.
