Awesome!! Also need a Kolkata food video now!! Couple of things, though! Gur is Jaggery/molasses made from the sap of date palm trees. It predates sugar as a sweetener in Indian, especially Eastern Indian cuisine. The Kalojam you had is a derivative of the Bengali equivalent of the gulab jamun - it is called Pantua. Surprised you did not find Mishti Doi, it is pretty ubiquitous!! Excited for the Kolkata food video and whichever city you are exploring next!

The second rosogolla that you had was darker in color. It was flavored with gur. This is a special gur, available only in winter, it is khejur gur. Gur is molasses, and khejur is date palm. On the date palm tree, a pot is hung to collect the sap. This is then boiled to concentrate the liquid and make molasses. All this is too complicated for us, just enjoy the sweets and continue your sinful and decadent life.

Starting from Durga Puja to Christmas to Football we celebrate everything.. You already know what to eat here especially if you have watched the videos of Trevor James, Mark Wiens, David Hoffman and Carlos Volpe.. so I wish you a very best time. You didn't see the Misti doi because they are not displayed in the sweet shops; you have to ask for it. There is another kind of Misti doi from Mother Dairy (red containers 400g) found in the stationary shops. Most of the concerts are cancelled or delayed due to Covid but don't miss the delayed & upcoming Kolkata Bookfair; you'll love it. Also Google search Kolkata Food festival.. there's something going on throughout the year..

Caju is pronounced "Caa - joo" (think "Calm Jew", minus the L and M in calm) and it is something you already know. Cashew is the adulterated pronunciation of the word Caju. Just like the word Pistachio is the mispronunciation of the word Pista. The "ras" in Rasgullah means juice or syrup and is pronounced like the English name "Russ", with Gullah meaning a round or spherical object. The words Gulab Jamun translate to Rose (or Rosy) Plum. Kala ("Kaa - Laa") Jamun means Black Plum. See! You're learning Hindi already!! 😊

@@FollowMeImaFoodieIndia, sweet! Just remember to listen for the correct pronunciations. The pronunciation rules for English (American) don't necessarily apply to the Anglicized spellings of Hindi words. Blame it on the Brits of a couple centuries ago who tried to write down their mis-pronunciations of Hindi words using the Roman alphabet. It's tough because, while the Hindi language contains all of the 26 letters of the English alphabet, it has a total of 52 "letters", consisting of 13 vowels, 33 main consonants, 4 Combined consonants & 2 Binary consonants. So you can see how inadequate the English written language is in reproducing the phonetic spellings of the Hindi language. 😁

Gur, also called jaggery. The difference, I believe, is that while jaggery is made from palm sap, gur is made from pure sugar cane juice that is heated so that most of the water is evaporated. Gur is the unrefined and does not have quick lime added, nor does it go through centrifuges, and other processes that not only clarify and create sugar crystals, but also remove most of the molasses and nutrients in the sugar cane juice, leaving behind something like 99.8% carbohydrates in the form of sucrose. Gur, therefore, is the pure nutritious sugar cane juice that is boiled into a solid. For thousands of years all over South Asia, and still mostly in the rural areas, gur was and is the candy bar all the kids loved. It is the next best thing to chewing directly on a length of sugar cane stalk or drinking fresh sugar cane juice. If you see sugar cane going through rollers on the streets, please do yourself a favor and STOP, and buy a glass or two. Same with fresh coconuts getting the tops of their heads chopped off with a huge knife. That will be your direct connection with the most ancient history of India.

Do try the vegetarian and non vegetarian food also…kolkata Chinese (specially pork stuff) is amazing! The Kolkata Chinese have a variety called Lap Cheung sausage and way better than the goan sausage. Try Golden Joy restaurant in at Tangra.

Misti Doi and Ras Malai & Rabri may have been kept in the fridge and may not be present on the counter. Make sure you ask about Misti Doi. Each and every sweet shop has their version. Also don't miss "Nolen Gurer Jal Bhara Sandesh" and also "makha sandesh"..you will like it just like the nolen gurer rosogolla. Also most sweet shops also keep savoury items ("fulkopi singara" or gobi samosa in hindi is one item not to be missed)..have some in between so that the sweets does not overcome you.
