Full written recipe of Berry Pulao
Ingredients:
Rice and Tahdig
2 cups long grain rice, washed and soaked
Salt to taste
1 tablespoon ghee
2 potatoes, washed and thickly sliced
Advieh spice mix
1 inch stick cinnamon
5-6 green cardamom
1 tablespoon dried rose petals
1 tablespoon coriander seeds
1 teaspoon cumin seeds
1½ teaspoons chopped nutmeg
A heap of saffron strands
2 teaspoons sugar
Tomato gravy
3 tablespoons ghee
1 large onion, peeled and sliced
1 cup tomato puree
1 teaspoon sugar
2 tablespoons advieh spice mix
1 cup water
Salt to taste
Chicken Koftas
1½ cups chicken mince
Salt to taste
1 egg, yolk and white separated
1 tablespoon advieh spice mix
Oil to deep fry
Sweet saffron water
½ teaspoon Iranian saffron
2 tablespoons sugar
Garnish Mix
3 tablespoons ghee
¼ cup cranberries
¼ cup blanched & peeled pistachios
1 tablespoon rose water
1-2 tablespoons saffron sweetwater
½ cup fried onions
Method:
1. Parboil 2 cups long grain rice.
2. In a pan add 1 tablespoon ghee, make a layer of thick sliced potatoes, then add a layer of parboiled rice, cover it with the lid and allow it to cook for 10-15 minutes.
3. For Advieh spice mix, in a mixer grinder add all the spices and grind it into a fine powder.
4. Heat ghee in a pan. Add sliced onions in the pan and let it caramelize well. Add a little warm water.
5. Add tomato puree, 1 cup water, sugar, 2 tablespoons advieh spice mix, and salt to taste. And let it cook for some time. Remove and keep it aside.
6. Mix chicken mince in a big mixing bowl with yolk of an egg and 1 tablespoon advieh spice mix, salt. Whisk the white of an egg and keep it aside.
7. Prepare small balls of the chicken mince, dip them in egg white and fry them in oil.
8. In another pan add ½ cup water, sugar, Iranian saffron mix it well till the sugar dissolves completely and transfer it into the bowl. Keep it aside.
9. In the same pan add ghee, chopped cranberries, blanched & peeled pistachio, fried onions, chicken kofta, rose water, 1 tablespoon saffron sweet water and toss it for a few seconds.
10. Assemble all the ingredients in a serving plate and serve it hot.
