You can easily identify sheep from goat. Goat is a stiffer meat with stringy layers like chicken it's because there is only muscle and very less fat between the muscle tissue. But sheep is soft and you won't feel leathery texture even though it has stringy layers like chicken. Cooked goat piece looks dark on outside and dark brown to dark red on inside. Cooked sheep piece looks orangish white or orangish brown on outside a pale white to pale brown or pale rose on inside. Both have different flavor juices while chewing and also both have different aroma while cooking chewing or smelling. I think goat is much healthier but it depends on how the goat have been raised. If it's hard working goat then you can expect a lean and tender soft meat. If it's a lazy and a barn goat then the meat is chewy fatty and foul smelly meat after it's cooked. Sheep is very very soft if it worked hard, but it's also soft if raised in barn but would smell alot. And age is also important for the meat experience of goat and sheep. I'm a big fan of ruminants. I've had quite a few goat and sheep breeds. Meat quality differs from breed to breed. So breed is a must for a great experience. What you were eating is a barn raised sheep.i Can say it by seeing.

And also in Andhra Pradesh, Telangana, Karnataka people eat sheep most. But in Kerala 50-50, in tamilnadu you cannot find sheep in any meat stall or hotels, unless it's a arab-keralite hotel or some Muslims hotels in deep tamilnadu. But I love sheep 45% and goat 55%. If it's not a free range meat I'll not touch it.

breast part of chicken has strands in it coz it has more fibre..whereas the leg part of the chicken which has bone in it is softer and less fibre.and yes it's also true that if the breast piece is cooked for more time it becomes chewy.but it's quite opp with leg pieces are more tender and juicy

Nahi harish sir Iran ki saffron ki quality bilkul bekar hoti hai.. kashmiri saffron sabse better hoti hai. Iranian saffron thoda yellowish hota agar apko Pechan karni ho kahsmiri aur Iranian saffron mai..aur Iranian saffron is cheaper than the kashmiri saffron in terms of price.

This is regarding how to differentiate sheep meat from other meat here are four quality of meat 1) Potle ka Gost ( Male sheep) actually used in biryany and haleem, usually soft and tender- it will become reddish brown when cooked in biryany of curry mutton is usually taste 2) Mendi ka gosth (Female Sheep) usually not used in cooking but sometimes it is soled, usually, the meat is hard and turn dark brown it will not good in taste and hard to chew usually used for breeding lambs usually meat will become red and hard after cooking 3)Bakre ka gost( Male goat meat) it may be used in biryani and haleem by hard to marinate and chew not recommended for biryani or other mutton curry si it smells 4) Bakri ka Gost( Female goat) not usually slaughtered - not suggested for eating as it is hard to chew, cook and marinate- the mutton will become dark brown after cooking as these animals are used for milking and breeding lambs-

A truly wonderful episode... Hyderabadi Biriyani/Haleem is really out of this world experience.. And you can get it only in Hyderabad... I say this though I am an occasional non-vegetarian like you... Andharites like their food very spicy which can put off some people, but otherwise it's a great cuisine.. 👍👍👍

If someone eats mutton biryani once or twice in a month, I think it's not possible to identify whether the meat is of goat or sheep. But mostly, in all places atleast in India, mutton means goat meat.

Lol It takes a long time nd experience to recognize that whether the meat is for got or sheep. Mostly got meat is much sweeter n less chewy then lamb/sheep. sir you could have tried fish biryani in cafe bahar, its so yummm over there & even its famous for fish biryani infact.....
