I’m feeling more and more confident in the results that I'm getting with the O3 camera (and DJI Avata camera). It’s not quite up to GoPro quality, but it’s close, with big size/weight advantages. The key factors I’ve found to getting the best video quality are keeping the ISO low (by shooting manual because auto mode chooses a higher shutter speed & ISO than desired), turning down the sharpening (you can add sharpening later in post) and noise reduction (you get more detail this way; less smudging; and you can take care of this in post if needed), and finally shooting in D-Cinelike for 10-bit color and more flexibility in adjusting saturation/colors in post.

GNB 850 HV 4s battery (5 min flight), 4k 60fps, EIS off, Wide, 1/80 shutter speed, Auto ISO (was around 100-800), ND 8 filter, D-Cinelike 10-bit, locked white balance at 6500, Sharpness -2, Denoising -2.
Stabilized in Gyroflow using 0.25 smoothness and dynamic zooming speed of 4 seconds.
Final Cut Pro editing: added saturation (global +1.47 and midtones +1.51), raised highlights +0.03, lowered shadows -0.02, added sharpening 2.7 (though I would recommend 2.5 most of the time).
