I’m 100% italian and been cooking for going on 60 years. Did it all like my mom and grandma. But I have learned, from you, there are more ways to make the favorites. I’m sure mom and grandma wouldn’t mind.

I make mine almost exactly like yours, wet bread and all. I only do 2 things differently. I add fresh basil and use an onion/garlic combo. Otherwise, I’m ingredient for ingredient. I just LOVE your channel. Binging it right now!

I like the "hybrid" reference; I took in all the ways my family have made them over the years and I believe 😅 mine are the best too! 😅 Very similar to my process; I use 4C breadcrumbs (this brand is a must....it's the Brooklyn roots in my family 😅), heavier on the breadcrumbs and less on the wet bread, I put in a little milk, only use romano grated cheese, a little heavier on the parsley, and.......I throw in some pinoli nuts. And I only brown them in olive oil and then submerge them in sauce to continue cooking. The other week, I made several batches of lasagna and my non-Italian wife asked me why I made a batch of meatballs the day prior for the lasagna and not a "meatsauce" the day of when making the lasagna. I gave her the look 😕. I said I'm not making booster club lasagna! 🤣

Been making the gravy (we call it sauce) and meatballs, almost just like yours, for decades but I learned a few things from you that I will do next time. I will season each can of tomatoes, add baking soda to the gravy to cut the acid and I will cook my meatballs in more oil. I’ve been frying them in too little oil. I also cook homemade Italian sausage before the meatballs and add both to the gravy. It’s how I was taught. The sausage flavors the meatballs and the sauce and vice versa. Some of my family likes the sausage, some the meatballs. I also use about nine cans of tomatoes and I freeze in batches for later. I chop some meatballs and sausage to make meat sauce for lasagna. It’s to die for. You must be the real deal cause a little old Italian lady taught me almost identical to what you do. Saving your videos and I will subscribe.

Hi Belle , we definitely love sausages , braciole and a good piece of pork .. but i usually portion this big pot out for storage and later use and will put my meet in them for a sunday dinner …. if you store it meat free you can use it for other recipes like vegetarian eggplant parmigiano or seafood recipes like red clam sauce …. i hope you enjoy all our family recipes 😊

@@livelaughandcookitalian thank you. I remove the sausage and meatballs and store them separately from the sauce just for that reason. Some is dedicated to lasagna, some to chicken or veal parm. Love having a freezer full.

when you grate the garlic you lose a lot to skin and heel and you do need to grate some and chop some for the right taste profile 😁

Looks delicious. Just helped mom make meatballs this past Sunday. We don't use the wet bread and don't bother mixing the eggs. Mom always just broke em and plopped them in. They all mix in good anyway.

I will make this for sure. Well planned out recipe and I enjoyed it. I like to put a dusting of flour on mine before frying them and I recently started letting them steam in a metal colander over the sauce after frying just like my mother used to. Right out of the colander as a kid is how I ate them! Will combine these into a Stromboli for sure

I like to put a couple paper towels in my bowl to soak up the excess oil from the cooked meatballs. 🍝 Note to self: reduce salt to 1/2 and garlic to 3-4 cloves.

Would you please show us how you mince your garlic? My organic bulbs i buy do not seem to have as large pieces as you get to actually do all those cuts b4 starting to mince. Are you using elephant garlic bulbs? Which i have never found organic.

i’ve had the oatmeal meatballs , they were ok , but i’m going to stick with the breadcrumbs … we never put anything raw in the gravy , everything gets par cooked / pan seared first to keep in the tenderness and juices … just like pan searing a roast before it goes in the crock pot or oven

Put oil on your hands before you mash the ingredients and the meat won't stick to your fingers. Same for rolling. Use heavy whipping cream to soak the bread. Squeeze the cream out of the bread into a bowl. The cream ads a bit of hardiness to the ball and you can use the recovered cream for Alfredo sauce.

My great grandmother taught us to use water so that’s how I make them ...it’s not the milk or water that makes them soft, it’s the wet bread so if you prefer milk, like many do, that is totally up to you 😁

Pretty much how I make my meatballs. I bake mine rather than pan fry them though. Doesn't matter, it's still a delicious meatball. I ended up here because I thought to myself maybe there's a better "authentic" way to make my meatballs. Turns out, I wan't doing half bad! I mean, I partial, but I make a damn good meatball. Anyone that knows me knows I'm super picky about my meatballs. If a meatball tastes like it came out of a can of Chef Boyardee, I'm throwing it at your head. Do better! Thanks for sharing your Italian heritage, cooking, & recipes with us!

Yes , 12 to 16 depending on the size ...but that’s of course if you are grating half and fine chopping half like I did in the video. Get yourself one of those garlic grating dishes..it will change garlic for you

I agree that you have the best meatball recipe. But I saw you put the used live oil in the sink and as a licensed master plumber I'm telling you that you may want to not do that. The olive oil itself is OK as it does not solidify but the fats from the meatball will solidify around the inside of your drain pipe. In the meantime, THANK YOU again for your meatball recipe.

Thank you for the advise …I actually didn’t pour the oil down my drain , i just put the pan in the sink to get it off the counter , I have a jar under my sink for used oil …We have a septic system so we don’t put anything down the drain… Keep enjoying those recipes !! 🤣

I usually put them in for 30 to 45 minutes … I will time all my meats accordingly, so if I’m making braciole or putting pork in there those will go in first after being PNC and they will usually put those in for an hour to an hour and a half then if I’m putting in sausage that will go in for a half hour then at the end I will put in the meatballs for a half hour to 45 minutes until they are tender and then it’s ready

This is Exactly how I was taught by my Mom! I make my meatballs in a few different ways these days and I make my Gravy and love Canning it to always have in hand! Canning my Sauce/Gravy I make very large batches for Canning several times a year. 🏝️🎶🤗

Great recipe...I made them...Everyone loved them ❤ thank you...I get tired of trying to perfect my grandmothers recipe...my meatballs NEVER come out as amazing as hers...but your meatballs are awesome...thank you so much...I will stick to this recipe ♡

The meatballs looks wonderful. For people with diabetes and on Low Carb diets, would you be able to adjust the recipe by deleting the bread and breadcrumbs and replace with crushed pork rinds? I know it is not the same but that is where many people are now with poor health 😔. Thank you.

Hi @TEXASrose ..There really is no substitute for the wet bread and breadcrumbs…they are used to soften the meatball … i don’t think the pork rinds will do the same thing… I would remove the bread and bread crumbs entirely and also remove the beef from the meat mixture and just use 50% ground pork and 50% ground veal… This will make for a softer meatball

Almond flour is a decent substitute for the bread crumbs. The crushed pork rinds get chewy.

I know a lot of people that use milk , not sure why my great grandmother used water but it’s the way we have always made them 😊

I know many people that soak in milk ...we soak in water ..I don't think either way is wrong 😁

I make mine almost just like yours, except I use milk on bakery italian bread without preservatives. I find the white bread gets too gummy. I try "shredding" it with a fork before I mix it in, makes it easier. Love the hybrid idea

I found that forming your hand into a claw and mixing the ingredients keeps the meatballs from being dense.

Soak your bread in milk if you're going to do that. There's no way you're getting all that water out of the bread. Why not add flavor with milk instead of diluting the flavor with water?

It usually takes mine about 45 minutes to be tender , but it definitely depends on many variables as to how long they take

@@livelaughandcookitalian My fault bad wording I meant the longer you keep the meatballs in the sauce they absorb it and I feel 20 minutes is not long enough. Great video super easy to follow keep them coming.

No worries Anthony , if you are going all beef they will definitely take longer , i can tell you that and it really depends how soft you want them. ..I hope you enjoy all my other videos !
