Hey Bru Dog! Would first like to say thank you for throwing out this great question! Refrigeration of the jars won’t hurt anything at all. If you have the space to do so, I wouldn’t say no to the idea, however, I don’t think it is needed. I usually keep my jars in a cool/dark place whenever doing my pickling but not refrigerated. The meat is still very firm, the flavors are infused thoroughly, and the meat keeps forever after. I’ve kept them in my basement in the summer months and the garage in the cooler time of the year with no problems at all. Definitely a great question and appreciate hearing from you!! Vinegar and Salt brine for 3 days dissolves ALL bones and prepares for sweet brine. After 3 days sweet brine ready to eat. 6 days total not weeks or months 😂

@@StrikeRykerFishing Yes ,someone had some in a jar. They made me a sandwich with it. And It tasted exactly like salmon salad sandwich.Not sure they would give me the recipe though. They wanted to make it for me instead by me supplying the fish.

Of course! Cheese cloth is just fabric. It is called cheese cloth due to the part it usually is used in the cheese making process! Hope you enjoy the recipe!! 🙌

Will that recipe work for suckers in the spring?

It really should! The only worry would be if you keep the bones in the meat, not sure if they would fully dissolve like pike do. The other thing to try with suckers is to smoke them! I’ve had MANY people ask me to catch and keep cold water suckers for them to smoke! Also thanks for the great question!
