10 eggs, 1/8 tsp salt ×2

1 Separate the whites and yolks of 10 eggs.
2 Cut the egg whites into small pieces with scissors.
3 Add 1/8 tsp of salt to the egg whites and yolks and mix.
4. Strain the egg whites through a sieve and remove the foam.
5 Apply a thin layer of cooking oil over low heat.
6 Alternate between yolks and whites and roll them when the eggs are 8-90% cooked. (Repeat 3 times)
▶Tips
It is easier to mix if you cut the egg whites with scissors.
The egg whites should be mixed as little as possible to create foam.
When filtering the egg whites, if you scrape the bottom of the sieve, they will filter out well.
Always apply a thin layer of cooking oil to the pan before rolling eggs.
Be patient over low heat and slowly roll the eggs when they are 8-90% cooked.
When rolling eggs, use the tip of the pan to press them into shape.
