I’ve had to come back to comment and say that I made this banana bread yesterday. This banana bread is dangerous. Whoever makes this needs not to eat it but to send it to myself so I can properly discard of it, in my mouth 🤤 First of all, you were correct...it was hard to avoid eating it right out of the oven and that’s exactly what I did! I just couldn’t stay away to allow it to cool. Oh how heavenly it smelled😭😍 It was so delicious! So delicious in fact, that I too have to agree that this is by far the best vegan banana bread I have ever made and ate! You can’t even tell there is aquafaba in it (which I was worried about for no reason, clearly). I woke up today to find less than half of it remaining and although a little part of me was sad about that, I was also so joyous to know someone else in the house also found it as delicious as I did. So, I sought out to do the only plausible thing there was to do....and that was to be sure to scoff the final slices all to myself after dinner. So no one else could, of course😂 Speaking of dinner, yesterday I also made your chana masala recipe and once again...it was absolutely divine! I’ve tried a handful of chana masala recipes but nothing compares to yours. This recipe is perfect and all the spices just happily marry one another in my mouth 🤤I didn’t have every single ingredient but as you said, ‘if you don’t have them,you don’t have them’. Therefore, I was pleasantly surprised (but not shocked) to find out this recipe is hands down the best chana masala recipe out there. Soon enough the house was fragrant with what was cooking and it was at that point when I knew I’d never have to hunt for another chana masala recipe, ever again. Some may think I’m overreacting when I explain how amazing your recipes are but truthfully, I really am not. I just want to say a huge thank you from my salivating tastebuds for these recipes and I’ll be 100% sure to make more. They are so simple, fuss free and the ingredients are easily accessible, yet the taste and satisfaction from them is huge. Next on the list is the bolognese and I can’t wait for it! I hope you are staying safe amid the craze of the current world and I send my love and support to you all the way from the UK 💚

Your banana bread is the BEST! I would say restaurant-quality. Moist, fluffy... simply delicious! I used unsweetened apple sauce instead of the oil, since oil makes the whipped aquafaba deflate back to its liquid form.

This is the best banana bread. I have made it several times now and my family loves it. I little tip on aquafaba you can freeze it. I use 1 tablespoon measurements and fill up my ice cube trays. Thaw before using. Now you have aquafaba whenever you need it.

I made this yesterday. Came out well and soft . Had few set backs where the coconut oil kept freezing (still not warm enough here) and had to microwave the mixture a couple of times in addition to microwaving coconut oil at the beginning. In the end it was perfect. I went with 2/3rd quantity of sugar.

I made this banana bread yesterday and I couldn't be happier with the results. I used half the amount of sugar and added a little less than 1/2 cup of chocolate chips and 1/3 cup of chopped walnuts. It was PERFECT! I'll definitely be making it again in the future. Thanks Nisha! You rock!

Thank you for the recipe! I made it with 1 cup whole grain, and 1 cup oat flour (white flour isn’t available here), added a handful of chopped walnuts, and dark chocolate chips... YUM!!!! It turned out so so so well :)

I have made banana bread more times than I want to admit and this is by FAR the very best ever banana bread I have made. It is light, fluffy, moist and oh so flavourful. The aquafaba truly makes all the difference in the world. The best part of this recipe is my search for the best banana bread is finally over- Woo Hoo!

The kids are asking for banana bread. I have not attempted any vegan baking yet so I'm going to try this tomorrow. I appreciate the metric version. I first learned to cook by weight/metric and very often will tinker with recipes to make a proper metric friendly version (ie making something 250 g instead of a straight conversion from imperial). Most of my cake pans are from Germany so they are sized in metric and slightly different from US sizes. Baking is much easier and turns out better when measuring by weight.

Yum! I've made this 3 times now. Each time I get a little better. I've never made [or eaten] banana bread before!! But I think its gorgeous. My boyfriend now thinks I'm an amazing baker! I had a chunky slice with a cup of cocoa watching a spookie movie... Heaven! I've sliced it up and I'm going to try freezing it. So I can have a 'go to' sweet snack. Hands down the best banana bread ever! I can’t stop baking this recipe! Only thing I changed was baking soda from 1 teaspoon to 1/4. For some reason I can taste the soda in the bread. 🤷🏻♀️ it’s too much for me so I add less. Thank you so much for sharing. ❤️🙏🏻

I made this as muffins and was so surprised by how good they were. Mine turned out a bit too moist, but that was better than being dry for sure. I also made a rosemary & brown sugar topping to sprinkle on the muffins before baking. Delicious!

I've been working on a whole food version of this with dates and nut butter in place of oil and sugar. It's been turning out denser than I'd like, some of which I'm sure is because I'm not using oil and sugar. I'm going to give your lightly whipped aquafaba a go next time, hopefully it helps 😁

Thank you for the recipe! Going to try it this weekend. Btw just FYI when you use the mililiters setting on your scale, that actually only works if you're measuring water. If you measure anything else (like oil) it's going to be wrong. Since oil is less dense than water, you will end up using more oil than the scales says you're using.

I had to share with you today 😊 I made your banana bread today, my very first baked good that is vegan ‼️ I had frozen bananas and cranberries so I used those. Being that when the bananas thawed they were were runny I added about a 1/2cup of oats to the batter. This bread is soooooo good‼️ 😊

I made this today, and I realized that I've been away from the States for almost 20 years and forgot how sweet desserts can be over there. The texture was perfect and the tastes behind the sugar were great- but my oh my- sooooo sweet. I'm going to jump right back on that horse and make it again today. But this time, I'll reduce the sugar to 1/4 cup + 2 Tbsp. (that is, about half).

Thank you for sharing. I use rye or buckwheat flour, no oil, no sugar, and flax seed meal for more nutrition. Beware of the excessive amount of salt added into foods like canned beans. Eden brand is salt free. cheers.

If you mircowave the bananas, the water begins to separate from them as they begin to boil. you can drain them and have lighter, less dense bread that way. You also keep all the flavor.

I believe u should leave the cup on the scale before u add the flower u most likely still turn the scale on wait till it comes on then put the cup then add the flower that's where it's going to be accurate

to give some practical tips: ditch the cups and just use a scale.. and sprinkle the sugar after you laid the banana slice into the batter, will save you some cleaning time ;). Im not trying to be rude.

I use scoop method for my flour and my banana bread turns out moist all the time! I guess it just depends (:

"You can scoop the wrong amounts." This is why as a trained cook in Europe, I dont scoop cups but measure in Grams.

Hahah the beginning was a MOOD. Definitely have been feeling that lately...but when in doubt make banana bread. I definitely need to try this asap! Have so many canned chickpeas and I'm sure the aquafaba feels left out :/ Thanks so much for the great recipe Nisha! 💛

Looks AMAZING!! I've heard that sparkling/carbonated water can also be a good egg replacement in vegan baking. Did you(or anyone reading this) happen to try this for banana bread? Anyone know if it actually works? Either way, I'm SO excited to try this recipe!!

yes sparkling water does make the cake more fluffy but the difference to using non-sparkling water isn’t that big.

I really wanna try a lot of your recepies, but i prefer simple and easy recepies, without to much special engredients.... i also like to make lots of food, for several days 😁
