Betty demonstrates how to make Roasted Sweet Potato Planks. These are delicious and very healthy.
Roasted Sweet Potato Planks
2 to 3 red sweet potatoes, peeled and sliced lengthwise into 3/8-inch planks (You may use white sweet potatoes, if desired.)
approximately 3 tablespoons extra-virgin olive oil
ground sea salt, to taste
freshly-ground black peppercorns, to taste
Line a 15-inch by 10-inch by 1-inch baking pan with aluminum foil. Place sliced sweet potato planks on foil. Drizzle olive oil over sweet potatoes, to taste. Grind sea salt and black peppercorns over sweet potatoes, to taste. Place aluminum foil over top of pan and seal edges with bottom piece of aluminum foil to make a packet. Bake at 425 degrees (F) 15 minutes. Remove top piece of foil. Turn sweet potato planks over and adjust seasoning and oil, as desired. Bake an additional 10 minutes, or until fork-tender. Remove from oven and transfer Roasted Sweet Potato Planks to serving plate. Serve immediately. Enjoy!!! --Betty ♥
