Welcome back to Flavours with Sunita! Today, we're diving into the world of authentic Indian cuisine with a twist - Bhurwa Karela! Join us as we explore the rich flavors and textures of this traditional dish.
🌱INGREDIENTS:
• 1/2 kg bitter gourds (karela)
• 1 tsp salt
• 1/2 tsp turmeric powder
• Oil for cooking
• 3 tbsp roasted chickpeas
• 1 tbsp roasted cumin seeds
• Salt to taste
• 1/2 tbsp turmeric powder
• A pinch of asafoetida (hing)
• 2 tbsp fennel seeds (saunf)
• 1 tbsp Kashmiri red chili powder
• 1/2 tbsp regular red chili powder
METHOD:
• Begin by washing and peeling the bitter gourds carefully. Retain the skins for our flavorful stuffing.
• Mix salt into the skins and let them sit for half an hour. Don't discard them - they're integral to our dish!
• Slice the bitter gourds lengthwise, removing the seeds but keeping them aside for our stuffing.
• Finely chop the seeds for our filling and mix them with salt and turmeric, ensuring to coat the bitter gourds inside-out.
• Rinse the skins with water, squeeze out excess moisture, and set aside.
• In a pan, heat oil and sauté the bitter gourd skins and seeds.
• Grind roasted chickpeas, cumin seeds, salt, turmeric, asafoetida, fennel seeds, and chili powders into a fine powder.
• Wash the bitter gourds again and stuff them generously with our flavorful mixture.
• Steam the stuffed bitter gourds for 10 minutes until tender.
• Sauté in oil until golden, and voila! Your Bhurwa Karela is ready to delight!
