Bibim guksu is a cold noodle dish with fresh vegetables served in a spicy, sweet, and tangy gochujang sauce. Thin wheat flour noodles called somyeon (소면/素麵)in Korean or somen in Japanese are used to make this dish. This noodle dish is one of the most popular traditional noodle dishes in Korean cuisine and is especially popular during summer, but I like to eat it all year round because it’s refreshing and tasty! : )

Ingredients, for 2 servings
200g or 7oz somyeon or somen noodles
1 boiled eggs
1 tablespoon sesame oil
1/2 tablespoon toasted sesame seeds
4~6 romaine lettuce leaves
1/2 cucumber
Sauce
1 tablespoon Korean chili flakes(gochugaru)
1 tablespoon soy sauce
2 tablespoons brown sugar
4 tablespoons apple juice
2 tablespoons gochujang
3 tablespoons rice vinegar
1 teaspoon minced garlic, optional
Instructions
1. Fill a medium pot with water and heat it to medium-high heat. Add the eggs and cook it for 8 minutes for a soft boil, and 10 minutes for a hard boil. Remove the eggs from the pot and quickly place them in ice-cold water to cool. Peel the eggs, and cut them in half
2. Mince the garlic. In a bowl, combine Korean chili flakes, soy sauce, rice vinegar, brown sugar, gochujang, and minced garlic. Grate the apple and add it to the sauce. Mix until it reaches a paste-like consistency.
3. Thinly slice the romaine lettuce leaves. Finely julienne the cucumber.
4. Bring a large pot to a boil. Add the noodles, ensuring they don’t stick together. Give them a gentle stir, and when it gets to a boil, add half a cup of cold water to the pot. Bring it to a boil again. When it gets a boil, turn off the heat. Drain the noodles and rinse them under cold water and drain.
5. Transfer the noodles to a large bowl, add the sauce, and thoroughly mix. Splash in some sesame oil mix again and sprinkle toasted sesame seeds.
6. Place a generous handful of noodles in the bowl. Top with vegetables. and half of a boiled egg on it.
