Watching you cook, Chelsea, is like watching my mom and grandma cook. By site and taste when cooking meals and using a recipe when baking (mostly). Same with how you are in the garden. You make me smile and remember, treasuring those memories so much. Thank you.

This episode was so good ! Top 5 reasons I loved it : Chelsea is so relatable even though she’s such a professional! Multitasking- WOW ! Editing - showed us more of what we needed to know and the end results was what we came here for 🤌 Great recipes ! Even with the sugar & butter it made me love it even more. Thank you for baking and cooking the way many of us do at home! Since there is never enough time in a day and I do a ton of cooking from scratch, I definitely don't enjoy videos where they get out a scale to measure ingredients. I'm glad those channels exist for people who crave precision; I'm just much happier watching videos with intuitive cooking! Keep up the good work!

You make me smile watching you add a teaspoon of this and 2 tablespoons of that, and not a measuring spoon in sight lol. Just like my Grandma. I must admit I'm like that when making white sauces for instance, just a dollop of butter, flour till "it looks right ", add milk etc etc My kids wanted me to write down my recipes and it was so hard cos I don't really measure, unless making something like hollandaise sauce. 😂😂

The days I get everything prepared in the morning are less stressful. I also get everything out I’m going to need and get started. It’s sometimes a bigger mess to clean up but the evenings are smooth. I love watching your videos!!

I remember my mother saying, Oh I got up early today and got so much done meaning her cooking. She baked her bread also and after I was on my own I got used to making my bread too. People would love it when I gave away loaves as Christmas gifts . Now I cook with organic foods and love how you buy a lot of ingredients wholesale and large bags of things you use alot of. I got dinner done by 9am. lol I agree its just so much nicer to have it prepped and out of the way. I then canned up some stuff, did a bunch of eggplants for the freezer, got cabbage in the dehydrator and now I'm just chilling. One kid has a concert tonight so I don't need to worry about anything but that.

When I make chocolate chip cookies, I will mix up the dough, roll them into balls and put them on a cookie sheet and freeze them. Once frozen, I put them in a baggie and only bake what I need for a few days. When the kids were home, I would quadruple my regular recipe and it was nice to just be able to get the cookie balls out of the freezer and pop them into the oven. No need to thaw them, they will spread out nicely when baking

To warm butter quickly, take a jar or glass that is large enough to cover the wrapped chunk of butter and fill it with hot water for one minute - enough time to war the jar thoroughly. Drain the glass and place it over the butter and leave for a few minutes. Like magic the butter will be warm enough to be room temp malleable in no time.

Just a thought, your cookbook cover has beautiful graphics and colors, if there was a copy in the center of your rehung white shelf on a nice book stand it would really compliment that wall in your videos.

I realky enjoy your baking and all. The use of the hand to measure is what I learned at home. Works fine as one can see and feel the often used measurements. I do wonder what a pedometer would show as you flit all around that kitchen. It's such a warm and homey place to work in.

Good evening from the UK. I am loving watching your videos. I came across your channel whilst in hospital for 3 weeks. So many I can watch whilst I am off work recuperating. I am a school chef and a general foodie, i love cooking and creating new meals or adapting a recipe to suit our likes. I have been tasked by my daughter to write up recipes while I am off as I am very good at listing ingredients but also not quantities or even methods lol X

I make those granola bars every week, we love them! They work great with any other nut as well, we currently have chopped peanuts in ours, next week will be pecans, just using what we have instead of having to go out and buy things we've run out of. also works great with any dried fruit, or no dried fruit! love them.

After thawing a liquid in zip lock bag,instead of opening the top,cut a piece off the bottom. Then nothing is left behind in the closer part.

Love the channel, you and your husband are living my retirement! My daughter-in-law bought me measuring spoons, she needed a bit more clarity than a pinch of this and enough till it tastes just right as directions for my recipes. Go figure! If you have any secrets to hard boiling eggs to where they peel relatively consistently that I get an egg and not a mangled mess, I truly would appreciate it. Merci

I grew up tossing ingredients together. We had teacups and flatware to measure and mix with. No shame in it at all. In fact, most folks compliment me on my cooking skills, and most of those are usually stunned if they ever see me cooking, measuring ingredients in my hand or just declaring a pile of flour or cornmeal to be just enough for whatever I'm making. But I definitely add more spices to my dishes than others do, but they all say how wonderful it is when they eat it, so it must be the right amounts.

I've never been one to not measure out items for baking and pack the brown sugar! I was taught you need correct measures for baking but guess eyeballing it works too! 😄

Hi. You must have been reading my mind because I was just thinking about an island in your kitchen and then thought no wonder she is lovely and slim with all that walking she does. Just happened upon your channel and subscribed and happy to hear you are from BC. I loved your recipes and you are one of the few people I have seen cook mince for a couple of hours or more. So many people cook it in under 30 mins but my mother always told me to cook long and slow, whether it be a roast or mince (sorry, ground beef your end). Look forward to catching up on some of your other videos. Thank you for this upload.

Any time I’ve asked my mother for a recipe she very rarely has measurements. Her “measurements” are a cap full of …a little bit of….or my favorite “just keep adding until it tastes good”.

I have seen some channels where the cook throws in a ton of salt or spices or incorrect/substituted ingredients and create many failed bakes. Chelsea has been cooking and baking for her family for many years and knows her measuring "eye" or hand will be about the right amount.🙂
