Looks like the mystery grouper is an olive grouper (Epinephelus cifuentensi) or a tenspine grouper (Hyporthodus exsul). Nice catches!

The ceviche looked delicious. I make ceviche all the time and mostly with the ingredients from this video. I do add some cocktail sauce as well. It gives it a nice little kick.....thanks for the great video.

That grouper might be a juvenile Warsaw grouper. However, the literature says they are only found in the Western Atlantic and Gulf of Mexico. Cool fish and I will continue looking for a definitive answer. Great video.

This was my guess, although I haven't fished those waters. If that was East coast of FL, I would say Warsaw juvenile.

I’ve never made ceviche without salsa Huichol. It is great in Mexican seafood cocktails. Usually, we make ceviche by running a fork through the Sierra’s flesh while the skin is still attached to the filet turning it into a mince. You can also let it steep in the lime juice a little longer.

After a bit of digging, the grouper in question is a Tenspine Grouper. The scientific name has changed over time so look up Tenspine grouper and you can read about. My first guess was a Warsaw which can be seen in an earlier post.

If I had to guess on the grouper, I'd say Warsaw? 10 spines on the dorsal, the second being very long.

Y’all killing me. 😄. Don’t throw away the Triple tail without taking the cheeks. Fry them up and I guarantee that is the best bite of fish y’all will have. If you think grouper cheeks are good, wait till you try those.

We usually freeze over night, and pack in a small cheap cooler with ice packs and carry it on the plane. Must be frozen

Brook , I love watching you fillet fish but then I see you always cutting towards your other hand holding the fish ? That always makes me CRINGE !!! You're not the only one who has done that ! I have now watched TWO You Tubers slice their tendons while filleting their fish on a boat while under way ! Blue Gabe did it in the Bahama's ! Lauren Lander's did it on her Sail Boat ! You double the risk of slicing your hand, or wrist open with one wave tossing your balance off just enough ! I beg you, PLEASE CUT AWAY FROM YOUR OTHER HAND , OR ONE OF THESE TIMES YOU will REGRET IT !!! Take good care, and thanks for all your video's !!!
