We took two racks of St Louis Spare Ribs, prepared and cooked them both exactly the same way. One on a Big Green Egg XL, and the other on a Yoder YS1500s Pellet Smoker. No surprise - they came out different.
For this cook, we used The BBQ Rub made by Malcolm Reed from HowToBBQRight and Mississipi Grind from Swine Life BBQ. There are links below so you can buy both. We made dry rub ribs this time - no sauce, no honey, no brown sugar - just the meat, the rubs, and the smoke. As you'll see in the video, they still turned out moist, tender, and yummy!
