i literally just finished making a biltong box with a cardboard box and a fan. i bug proofed it with sheer fabric over the vents i cut in the box, added a plastic drip tray underneath i had laying around the house, and the fan and skewers i picked up at dollar tree. the hooks i just made myself out of some wire i had. hanging the bitong now!!! thanks

Air-cured like prosciutto. The salt and vinegar prevent unwanted bacteria and mold from growing

South Africans/danish person here. (My father fleed 🇿🇦 because of apartheid)grew up in Denmark, when family came up they always had biltong with 🥰🥰 so good, much better then jerky.. Lived with my grandparents in South Africa from age 4to6 and lived on biltong

Do that where i'm at, ler the beef hang by the window, those pieces of beef would be crowded with ants abd flies. Thats if my cat doesn't get to it first.

Wet and fatty is where it’s at, but when you’re in the bush there’s no such thing as bad biltong. Did a four month job in Northern Cape, and chili bites got me through it.

My wife and I will go through about 2 kg of biltong and additional on top of that droewors (Dry sausage) each month. I cannot imagine life without it.....

I have 2 big bottles always. I marinate my steaks in it before every Braai (Barbeque). You buy it even in gas stations here....Its everywhere.

Everytime I've bought a bag of this stuff from various suppliers it's always full of sinew and connective tissue and lots of fat.. maybe if I found one that wasn't half made of beef chewing gum I might feel diffrent

Everyone has their own twist, as an example, my mother uses apple cider vinegar, no sugar (why do americans add sugar to everything). You can go wetter than that (imagine a slightly drier level than a salami on the inside). Also use fat lined cuts, cut your strips with the grain. But certainly if you like this version stick to it.

Your wet cure and dry cure should be seperated. After wet curing for 24 hours, pat dry with paper-towel then use the dry rub.
