*Ingredients:*
- 2 cups wheat flour
- Fenugreek (Methi) leaves
- Salt to taste
- Red chilly powder
- Carom seeds (Ajwain)
- Oil
- Lukewarm water
- Tomatoes
- Green chillies
- 1 tbsp oil
- Kalonji (nigella seeds)
- Cumin seeds
- Mustard seeds
- Jaggery
- Rock salt
- Ghee
*Procedure:*
1. Wash and dry Methi leaves overnight.
2. Prepare the dough by mixing wheat flour, salt, red chilly powder, carom seeds, and oil. Knead with lukewarm water.
3. In a pan, sauté Kalonji, cumin seeds, mustard seeds, and green chillies. Add tomatoes, salt, and let it cook.
4. Add jaggery to the chutney, mix well, and set aside.
5. Chop Methi leaves finely.
6. Roll a chapati from the dough, apply ghee, add Methi leaves, roll and fold like a Lachcha parantha.
7. Cook the parantha on an iron Tava without ghee initially, then add ghee on both sides.
8. Cut into quarters and pack it in a tiffin box along with the tomato chutney.
