Binagoongang Tokwa at Talong, translated into “Tofu and Eggplant sautéed in Shrimp paste” is a simple but flavorful dish made of fried eggplant and tofu, simmered in a tomato based sauce that’s mixed with garlic, onions, shrimp paste, pepper, sugar, a bit of water, and some chillies for extra spice.

INGREDIENTS:
1/2 kilo Eggplant (talong)
4 pieces tokwa (tofu)
4 tablespoon shrimp paste (bagoong alamang)
3 cloves garlic
1 medium onion
2 medium tomatoes
pepper to taste
1/3 cup water
1 teaspoon sugar (optional)
red and green chili
oil for frying
Steps:
In a pan with some oil, fry eggplants till they’ve browned. Set aside. In the same pan, fry the tofu until crispy and golden brown. Set aside.
Take out some of the oil, leaving only a tablespoon or so. Saute garlic till aromatic, add in onions and cook till soft. Then mix in tomatoes and cook till it’s easy to crush.
Mix in shrimp paste. Add in pepper, sugar, and water. Stir for a few minutes before adding the green chillies.
Place back the tofu and eggplant. Mix well. Top with red chillies. Serve with freshly cooked rice.
