reminds me of the old day mills with mules turning the mill stones. Impressed with this mill. I press my olives using an alfa laval press.

The Press is so simple. Love it. I've seen this method used by very rural people in the middle east. Not nearly as cleanly as this.

showing the superiority of tradition with simple video, whereas olives grown in the western world are based on productivity and profit. the conserve of tradition culture and people are closely aligned in this world where we have to google what real olive oil and honey looks like

You did not taste the olive oil of Palestine or Jordan. I agree all Mediterranean countries have good olive oil but nothing is better than that of Palestine Olive oil I think.

I believe it gets sifted to remove remaining olive particles from the oil, that's why final liquid is clearer than pressed one
