Ingredients :
For Pressure Cooking Bitter Gourd (Karela) :
2 - Bitter Gourd (Karela) (Deseeded and cut into thin strips)
2 tbsp - Water (For Pressure Cooking)
¼ tsp - Salt
For Making Bitter Gourd Potato Veggie (Karela Aloo Sabzi) :
2 tbsp - Mustard Oil
1 tsp - Cumin
1 tsp - Chopped Green Chili
1 tbsp - Chopped Garlic
1 cup - Sliced Onion
2-3 - Thickly Sliced Potatoes
½ tsp - Turmeric
¾ tsp - Salt
1 tsp - Red Chilli powder
1 tsp - Coriander Powder
½ tsp - Garam Masala
1 tsp - Dry Mango Powder (Amchur Powder)
1 tsp - Jaggery
2 tbsp - Chopped Coriander Leaves
Directions :
For Pressure Cooking Bitter Gourd (Karela) :
In pressure cooker add, 2 bitter gourd (karela)
Deseeded and cut into thin strips
Add 2 tbsp water
Add ¼ tsp salt
Mix well
Close the lid
Pressure cook on high flame for 2 whistles
Immediately release the pressure and open the lid
Remove bitter gourd (karela) in a bowl
Keep it aside
For Making Bitter Gourd Potato Veggie (Karela Aloo Sabzi) :
In a medium heated pan add, 2 tbsp mustard oil
Add 1 tsp cumin
Add 1 tsp chopped green chili
Add 1 tbsp chopped garlic
Saute for few seconds
Add 1 cup sliced onions
Saute onions until soft
Add 2-3 thickly sliced potatoes
Add ½ tsp turmeric
Add ¾ tsp salt
Mix well
Cover and cook the potatoes
Add the cooked bitter gourd (karela)
Add 1 tsp red chili powder
Add 1 tsp coriander powder
Add ½ tsp garam masala
Add 1 tsp dry mango powder (amchur powder)
Add 1 tsp jaggery
Saute for a 2-3 minutes
Add 2 tbsp chopped coriander leaves
Mix well
Remove the Bitter Gourd Potato Veggie (Karela Aloo Sabzi) in a plate
