I find that with baking .I much rather use unbleached flour. My bread comes out perfect, and the fact I want to stay away from additional chemicals. We have enough chemicals within our food . WOW I'm glad I found this channel. Very informative.

I am going to guess that from an health standpoint there is no major downside with bleached flour, I suppose if there were the product would be taken off the market. I have never used bleached flour but my cousin was in Costco today and picked up a 50lb bag of Bleached Bread Flour, I bake a lot of Sour Dough bread as well and several types of cookies and cakes, so I was researching if there was a downside to using bleached four. I would imagine that most commercial bread making is made with Bleached Flour. I have never spent any time reading the labels of a loaf of bread but I may do that next time I am in the market. Since I am now near 70 yrs old and don't have any major health problems I am going to guess that eating bleached flour is no worse that drinking from a garden hose , which did a lot of as a kid and now I hear that is a big no no.

Unfortunately, your assumptions are wrong. In all of Europe it is absolutely illegal to use or distribute American bleached flour, Europeans have been getting sick from our American flour when they visit the US for Year’s an finding once they return to their country European flour is not a problem. Millions of people have autoimmune diseases an are extremely sensitive to inorganic bleached American flour. Flour will naturally bleach to an off-white color when stored for 2 months, producers in the US don’t want to pay to store their flour for 2 months so they add harmful chemicals to the processation. The all for profit attitude is making people sick in many facets of our lives. I exercise my dollar on Organic Whole Foods. Good luck with your assumptions. Peace.

Bleaches are very volatile, this means they evaporate off very quickly. This is why leaving tap water out for 24 hours dechlorinates it and makes it safe for pet fish (water is chlorinated with sodium hypochlorite, aka bleach). By the time it gets to you there is nothing left but flour.

Pretty cool. I’m curious if the bleached flour has any of the bleaching product left over in it after the process is over
@Sara-gl8ue
2 жыл бұрын
I'm guessing it does because you can't use bleached flour when making sourdough bread. The bacteria and yeast don't proliferate nearly as much in bleached flour, which tells me that there's some sort of chemicals still in it that inhibit the yeast and bacteria activity. They don't like tap water either because of the chlorine and other chemicals that have been added.
@GogiRegion

@@Sara-gl8ueMy guess is that it leaves behind chlorine ions. Technically this is the same thing as in salt, but even the chlorine in salt can kill some bacteria.

@@kennydavis2276 Because the chemicals they bleach it with are considered toxic. Would you drink or eat chlorine in any form? No sodium aluminum sulfate (generally safe) generally safe? If you rarely consume foods made with flour, then you don't have anything to worry about. But.... If you consume foods made with flour on a daily basis, which most people do, then... The chemicals in the bleached flour will have a negative effect on your body. You are slowly accumulating these chemicals in your body and eventually you will have health issues.

I would go with unbleached if you are worried about any of the bleaching agents used in bleached flour like nitrogen peroxide, chlorine gas or chlorine dioxide. If not, bleached flour is a little easier to use for baking.

Which is better Gold medal unbleached flour or organic all purpose
@shaniybryant8474

Organic is used for marketing. It usually just means LESS chemicals are used. Check the nutrition facts and make sure they’re are no other chemicals in the “Organic” and make sure it’s not bleached. Also double check the Gold medals nutrition facts, because the gold medal flour could be unbleached but will still have other chemicals in it.

I don't think you'd be able to find it. Flour millers are probably skeptical of selling it because it would have inferior qualities like a dense loaf and weak gluten network.

I notice that you interchange the slang terms "bleached" and "bleaching" with actual bleaching and that you even state that they are the same thing, just that one uses a chemical and one does not. If your sole criteria is... Has the flour been whitened? And you choose to describe that by using the slang term bleaching, than you are correct, the flour has been "bleached" by being exposed to the air, which oxidizes it, thus causing it to become whiter. However, I think we both know that these processes are NOT "the same thing" and that it is wrong to suggest to people who aren't aware of residues that are left in the flour by actual bleaching are just fine. Most (not all) " bakers" and their product consumers are habitually obese and that is because they stop asking questions once the desired baking conditions, colors, and flavors are attained. Nobody in the baking world really seems to care about whether this stuff actually belongs in the human body or not. Look up "denovo lipogenesis" and think about that every time you bake some "love" for the people in your life and wonder why their lipid panels are way out of wack. ALL refined grain products spike your insulin far beyond anything that was possible before the advent of modern agriculture and bleached (real bleached) flour is at the top of the "spiking pyramid"! Plus... You get a nice dose of bleaching agent residues. I'd like a little extra chlorine gas with my cake please! 😉 Yum! Big pharma says... "Keep on baking! And make sure you use nice white, chemically bleached flour and sugar"!

Bleached flour will NOT hurt or harm you. All it is, is a food grade peroxide. I've been baking bread {yes, even sour dough}, cakes, cookies etc. for years with bleached flour before unbleached flour and those hideously overhyped flours, {cough} {King Arthur and Red Mill} were commonly available. And guess what? I'm still here to tell the tale. BTW, all the baked goods turned out wonderfully. So yes, feel free to enjoy bleached flour.
