It’s going to change the temp. You have to take care of both sides. KC wise anyway, you always babysit. It’s just like canning.

I monitored it. Not having the embers in the chamber does seem to slow down the cook time a little, I'm guessing it is because the attachment increases the volume of space being heated, and increases the places where heat can escape.

Agreed. I've actually done both with it. The cheese is aging. A video on it is coming soon.
