Ingredients
200g bok choy
1 tablespoon salt, for blanching the bok choy
2 tablespoons vegetable oil
1 tablespoon minced garlic
2 tablespoons chopped green onion
1 tablespoon chopped red chili pepper
1 tablespoon sesame oil
Sauce
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon mirin
5 tablespoons water
Instructions
1. Cut the washed bok choy. Quarter large ones and halve small ones to make uniform size.
2. Bring water to a boil in a pot. Add salt, immerse the thick stems first, for about 10 seconds, and then blanch the leaves for 10 seconds. Remove the bok choy from the water and drain.
3. Thinly slice the green onion, mince the garlic, and chop the red chili pepper.
4. In a large pan, add vegetable oil, green onion, garlic, and chili pepper. Heat the pan over medium heat and stir fry them until fragrant, for about 2 minutes. Add soy sauce, mirin, rice vinegar, and water to the pan. Bring it to a boil.
5. After boiling the sauce for a minute, introduce the blanched bok choy to the pan, mixing them with the sauce. Cook it for an additional 2 to 3 minutes, until the bok choy absorbs the sauce.
6. Turn off the heat. Add sesame oil and mix.
7. Serve it warm with a bowl of rice of noodles.
