I made it today, but exchanged a portion of the salt for curing salt......wow.....it was so so so good, the cardamom and coriander really give it the right flavour. Thank you.

The loaf shape actually makes sense. It is exactly the same shape as a slice of bread, so no wasted bread. Unlike a round slice of bologna.

My 73 year old mother speaks of the days when she remembers bologna was stored in a brine in a tub. I am wanting to change my modern ways and go back to the old paths.

I just wanted to give you a thank you. I was wondering through Facebook and came across a post that somebody put up of your homemade bologna recipe. And as I read through it it struck a memory and brought it back to the surface this is the same recipe my grandfather used when he made bologna and I'm hoping to use this recipe to make some for my kids so they can taste some of my childhood so thank you for posting this up

Reminds me of a product I would occasionally see in a local grocery store deli called 'Bavarian Meatloaf'. It is used as a cold sandwich meat that can be cut very thinly and is very fine like a Bologna and can fry a thicker slice to be part of a meal. Going to make your version because it looks similar for a fraction of the cost - and I know what is in it!

I thoroughly enjoyed this tutorial. We just processed a quarter of beef and a half a pig (locally raised). I was looking for a tutorial on curing and smoking side pork. Found it and then also this one. Loved this. Will be making it ASAP. One tip though. Get a Bosch Kitchen Machine! So much more efficient! So much less mess! Love your you tube videos and will be coming back for more. Thanks!

I agree with Rubizen's comment below on the shape of your bologna. I'm going to try your recipe. I wonder if Tender Quick would be a good addition? All those good spices, sounds really tasty! Glad that Nikki recovered. I was watching duck dynasty. Willie opened a restaurant. His signature sandwich was fried baloney. His teenage son watching dad. He asked his what is made of. Then started on the ingredients. That's when I started looking for an alternative. Love fried baloney. Thank for the video Tim. Watched it when first posted it.

I thought you were full of bologna in your title! Then I realized that you really are full of bologna! Made my mouth water thinking about a place in Bonnyville, Alberta that made bologna and it was just like a great summer sausage. White homemade bread and real butter! Wow!

I've watched your video a while back and knew that I had to try this recipe but for some reason I never did. Yesterday I decided that I have to give it a try. I'm so glad I did. This is better then the store bought bologna. My two six year olds said "Mommy this is infinity good". I guess that means they liked it...lol. Thanks so much for sharing. It is not every day you get a recipe that is worthy to be placed in the family recipe book.

I stumbled upon your channel while looking for 'ham press' videos. Your recipe for bologna made me smile. The end product looks good too! I wanted to share a little tidbit with you. In Germany, your recipe is called Leberkäse &/or Fleischkäse. They are made in a similar manner, to include the shape. Thanks for showing me a different recipe. New subscriber.

i'm new here but I'm loving this channel! I just noticed your stove! I have one just like it but white and green,I am wanting to convert it to propane as soon as I can do d someone who k ows how, it needs a whole regulator set up for that etc,but the burners are cast iron and must weigh 2 lbs apiece! ...Made around the 20's I think.You are a pleasure to watch cooking ,my husband of 38 years never had a pan in his hand,I made a mistake and spoiled him when we first got married!Lol!

Just made the Balogna ….smells delicious. It reminded me of the German Leberkäs, or Fleischkäs ….first has Liver in it … the second is probably more like this bologna. I made only half the amount and it seems to be done after about 2 hours.

This looks awesome!! I have some questions I hope you can answer for me. Can you freeze this after it has cooled? When you smoked it, did you smoke it also at 275 degrees F and then check for the 155 - 160 internal temperature for done? You mentioned and showed some salami you had made. Can you share that recipe too? Thanks!!

Well, my Bologna is in the oven :). Somehow in Canada with Kg to Lbs, I have a bit more and it sits quite high in the baking loaf. I put a pan under to catch any liquids. Question: How long does it keep in the fridge (5-days?) and I assume after slicing, I could vacuum seal and freeze, right?

You can use soy protein instead of powdered milk if you have someone in the household with a milk (protein) allergy. The Sausage Maker stocks it...

In Germany, it is Leberkase. The meat mixture is a little different, as veal is used with the pork, but it is otherwise the same.

I did make your recipe, but it isn't like the bologna I use to make back in the 60's, of course, we had the buffalo chopper and the buffalo stuffer. There was something missing from your recipe, not sure what is missing I think maybe the curing salt and cumin. Anyway, your recipe made a very good lunch meat, which I did enjoy.
