Custard Pie:
Makes one 9-inch pie.
Preheat oven to 350°F.
(If you love eggs, you'll love this one!)
Ingredients:
1/3 cup sugar
2 tsp. flour
1/2 tsp. salt
3 eggs
3 cups milk, divided
1 (9-inch) unbaked pie shell
1/4 tsp. nutmeg
Directions:
1. Combine sugar, flour, salt and eggs and mix until smooth.
2. Heat milk to boiling point. Add 1 cup hot milk to egg mixture. Pour that into the remaining hot milk.
3. Pour into unbaked pie shell. Sprinkle nutmeg over the top. Bake at 350°F for 40-45 minutes.
4. Let cool and then chill in fridge to set up properly for a couple hours. Enjoy!
Rice Crispy Treats:
Ingredients:
1/4 cup butter
4 cups mini marshmallows
5 cups rice cereal
Directions:
1. Melt butter in a sauce pan over low heat. Add marshmallows and stir until melted and we'll blended. Cook for 2 minutes, stirring constantly. Remove from heat.
2. Add cereal. Stir until well coated.
3. Using buttered spatula or silicone spatula to press mixture evenly and firmly in buttered 13×9 inch pan. Let cool. Cut into 2×2 inch squares. Enjoy!
Pineapple Upsidedown Cake:
Serves 12.
Preheat oven to 350°F.
Ingredients:
1/4 cup butter
1 cup brown sugar, packed
1 can sliced pineapples, preserve juice
4-6 maraschino cherries
1 box Betty crocker super moist (sorry), yellow cake mix
vegetable oil, box measurements
eggs, box measurements
1. While the oven is preheating, melt the butter in a 9×13 pan in the oven.
2. When melted, sprinkle brown sugar evenly over the butter. Arrange the pineapple slices and the cherries to your liking and press them gently into the brown sugar. Set aside.
3. Add enough water to measure 1 cup with preserved pineapple juice into a measuring cup.
4. Make the cake batter as directed on the cake box, substituting the pineapple juice mixture for the water.
5. Pour the batter over the pineapples.
6. Bake for 42-48 minutes, checking that a toothpick comes out clean. Take a knife around the edges of the pan then flip it onto a cake plate. Let it rest for 5 minutes before taking off the 9×13 baking dish so the brown sugar can drizzle onto the cake. Remove the baking dish and let cool for 30 minutes. Serve and enjoy!
Super Simple Meatball Subs:
1 bag Italian style meatballs
1 jar marinara sauce
provolone cheese
steak rolls or sub rolls
Cook the meatballs with marinara in the instant pot or on the stove, then assemble your sandwich! Toast the buns... Pair with fries! Enjoy!
