Here is a special Boondi Laddu Cake that you can make for festivals. What is special about this cake is that it looks like a large boondi laddu!
Boondi laddu is one of our favorite Diwali sweets and this cake is one of those Diwali recipes which combines our love for boondi laddoo and cake too. This is an eggless cake that can be baked in an oven, microwave or even a pressure cooker.
The video also shares how you can make fine boondi at home without a jhara.
The frosting of the boondi laddu cake is also very different and very Indian in its flavour- a rabdi flavour.
This Boondi Laddu Cake is ideal fro Diwali and also can also be a perfect gift on bhai dooj for your brother!

Recipe :
Boondi Laddu Cake
Preparation Time: 15 minutes
Cooking Time: 35 minutes
Serves: 3-4
Ingredients:
For the cake:
1 cup Flour
1 cup Sugar
1 cup Milk
1 tsp Vinegar
1 tsp Vanilla essence
1 tsp Baking Powder
¼ cup melted Butter
2 Cups Whipping Cream
For the Frosting:
200ml condensed milk
1 cup chopped white chocolate
4 cups whipped cream
2 drops rabdi essence
For the Boondi:
1 cup besan
1 ½ cup water
1 cup sugar + 1 cup water
2 drops orange food colour
Method:
Sift the flour with the baking powder and set aside.
Add the vinegar to the milk, mix in and set aside for 10 minutes.
Mix in the vanilla essence and sugar into the prepared butter milk and mix well.
Fold in the flour and mix to a smooth consistent paste.
Mix in the melted butter.
Grease a doll cake tin and dust with flour.
Pour in the batter and bake in a preheated oven at 175C for 35-40 minutes or till a skewer inserted in the center of the cake comes out clean.
Remove and set aside for 10 minutes to cool down in the baking pan.
Remove from bowl and set aside to cool completely.
Making the Boondi:
Whisk the besan with ½ cup water to make a thick lump free batter. Add the remaining water and make a very thin runny batter.
Heat oil in a pan. fill the batter in a piping bag. Make a very small snip and pour the batter over medium hot oil in drops continuously. Once, crisp, remove.
Bring the sugar and water to a boil for the syrup. Simmer for 7-8 minutes to make a syrup of 1 string consistency. Add 2 drops orange food colour. Remove from heat and add the boondi. Allow the boondi to soak the syrup.
Making the Frosting:
To make the frosting, melt the condensed milk and white chocolate in a pan. remove from heat. Whisk well. Add the rabdi essence. Cool completely. Slowly fold in whipped cream. Frosting ready.
Assembling the cake:
Slice the cake into 3 slices. Soak the layer with a light sugar solution. Spread 1 cup frosting. Place 2nd layer and repeat. Cover the entire cake with remaining frosting. Cover the entire cake with fine boondi. Garnish with sliced pistachios and silver foil. Cool and serve.
