Christine, red wine usually needs a few years in an oak barrel to round out. Not saying that that a one or two year old red is not drinkable.. I am born in the BAIRRADA region and I stomped a few grapes with my feet when i was young. BTW, BAIRRADA is right across from where you live going west toward the sea. Visit Mealhada and that region ….you will like it…

Thank you Cipriano! I have been wanting to do a proper wine maker course for the last year to learn more about Portuguese varietals and the best way to get the best out of the grapes - hoping to do that in the next year as well :) Thank you, I'll check out that region :)

Os gatos adoram caixas. As garrafas nao precisam de ser esterilização. Basta serem bem lavadas e sem resíduos de outros engarrafamentos

A couple of tips for good maintenance of the a/c (aircon) units we have learned along the way. The outside unit will greatly benefit from a good hosing down a few times a year, especially if you have sand storms. The inside unit actually do well with a good clean at the end of summer, as mold can build up. They have kits that can allow you to do it yourself complete with a spray foam to loosen up the gunk. We love ours! 💕

I like your honesty, most people wouldn’t admit disappointment in their wine. I used to drink wine but quit many years ago. If I were in your shoes, I’d just sell the grapes and buy the occasional wine you truly appreciate. Too much labor involved maintaining and harvesting and processing for my taste. How much wine does a person normally drink anyway. Same goes for gardening except for those that enjoy it more for a hobby than supplying ones’ needs. Too many irons in the fire, as stated out here. Thanks Antonio! yeah - at some point I'll surely get handle on all those irons ;) I hear you, but I think I will enjoy the process of wine making - even though it is a lot of work. It is a nice dream to be able to produce something really special from one's own labour - so I'll keep trying and learning the art of wine making :)

I can’t help but wonder if the winemaker is using wild fermentation on your wine as it is usually the case in those regions. I would try commercial yeast like ec1118 or k1v1116 etc for a much cleaner fermentation and that will eliminate some of that yeast taste and of course don’t give up or be discouraged you will soon be very happy with the results

Thanks Alex! I had to go read up on what wild fermentation was. Yes! You've hit the nail on the head!! I need to read up more about the process itself or attend a course - which I'm actively considering. :) With this process it seems we so far have always had more yeast in the final product - could also be that we need to let it ferment longer, or do an additional tank clean or use oak barrels as someone has suggested. Thanks for pointing me in the right direction! One day I believe the wine will get there! :)

Ja nee, self hoor! I'm really hoping to learn more about the process. It is so much better than the year prior, so something in the process is definitely working better - now just that last refinement. We have learnt so much every year and I'm really wanting to learn even more by doing a proper wine making course for Portuguese varietals - will see! The bottling was definitely fun :) x

🎉Congratulations, all round, Christine... The farm is looking beautiful, blossoms all over and vines sprouting. What a huge increase in wine harvest this year....and hope your wine continues to improve over the coming weeks. You designed a beautiful label there for your wine😊 The aircon will be a great addition come summer and the extreme heat. Blessed with lots of rain too this year. Weeding is a tedious task, but you are making progress. The animals sure are loving all the activity😂 Cheers!

Thank you! x haha the animals definitely love me being outside more, especially the cats as they get to inspect all my work! Things are just growing exponentially, but I am excited to see what it means for all the crops this year. :) Definitely need to get some help from the agricultural side over the summer months, that is for sure! xx

I tasted it at the end of the video :) And gave my comments about it. It was still a bit yeasty for my taste, but hoping it matures a bit more in the bottle. :)

Thanks Antonio, do you think so? I read up about wild fermentation vs commercial yeast to balance the wine more and control the yeast - I think that might also be a reason?
