After I watched Bruce Mitchell turn on his griddle I had to heat up my griddle on high heat, smear a cple tblsp of evoo. Allowing to heat long enough for little whisps of smoke. Turn down burners to about a quarter. Add sliced and chopped peppers and onions. I like to add andouille sausages on top of the peppers and onions while cooking. Cook to temp. Plate. Enjoy.
