A dish I remembered from my childhood, a dish of the past,cooked with love and how I still miss it!!
Ingredients
1.6 kg duck
6 eggs, hard boiled
150 gm galangal , sliced
100 gm shallots, sliced
45 gm garlic, roughly chopped
1 inch cinnamon stick
2 star anise
2 cardamom
1 to 1.5 tbsp five spice powder (if you don’t like this, just put 1 tbsp)
1/2 cup sugar (palm, cane, etc)
50 gm rock sugar
1/3 to 1/2 cup dark soya sauce (depends on how dark you want it)
1 tbsp light soya sauce
1.5 to 2 cups water (depending on duck and fire)
1. Sauté garlic,shallots, galangal, star anise,cardamom,cinnamon stick.
2. When it’s fragrant, add five spice powder and sugar, sauté till everything is caramelised
3. Add dark and light soya sauce, mix well
4. Baste duck with the sauce well
5. Add 1.5 to 2 cups water and let it braise in low fire, covered
6. Constantly check, turn and baste duck with gravy
7. 1 hour or so later, add in rock sugar, innards ,eggs and salt to taste
8. Cook uncovered for another 20 to 30 mins ,to thicken gravy
9. Total cooking time should be around 1 to 2 hours, depending on duck and fire.
10. Poke the thickest part of duck to check for doneness.
**Keep any leftover gravy to cook more eggs or pork belly for another meal!!
