This is a well-loved classic and everyone has their own version and technique. This is my mother's version of Braised Pork With Tofu And Egg (Lou Bak or Tau Yu Bak, 豆油肉). I learnt this while looking over her shoulder.
Ingredients:
200 g pork belly
200 g pork shoulder (twee bak)
1 piece firm bean curd (tau-kwa)
4 hardboiled eggs
2 Tbsp vegetable oil
350 ml water (about)
Spices and Seasoning:
1 Tbsp sugar
80 ml light soy sauce
1 Tbsp caramelized dark soy sauce
5 cloves of garlic, skin removed
5 shallots
1 star anise
4 cloves
1 cinnamon stick, about 3 inches
1/2 tsp 5-spice powder
