INGREDIENTES DA GALINHADA
10kg free range chicken
5kg of rice
1kg onion
1kg pepper
1kg carrots
1,5kg tomatoes
Salt and garlic
Achiote or paprika
Pork fat
Vinegar or fat to wash the chicken
DIRECTIONS
Cut the chicken in pieces, wash with water and vinegar, drain and smear with home made garlic salt and paprika or achiote.
Mince the onions, the tomatoes, the pepper and grind the carrots
Braise the chicken in pork fat until it gets golden
Fill the pan with water and boil until the meat is tender. About one hour if the chicken is free range.
Braise the onions in pork fat, then add the pepper, the carrots and last add the tomatoes.
Keep some of the vegetables to add them raw when the dish is ready.
Pour the prewashed rice in the pan.
Then pour the chicken stew on the rice after 5 min of stirring
Taste the salt, add if necessary.
Wait till the rice is soft.
Garnish with the vegetables you kept apart.
You may add, olives, peas, sweet corn or anything you fancy.
