Chef Mike's Turkey Brine Recipe
2 gallons cold water
3/4 c. salt
3 T. whole peppercorns
5 whole bay leaves
4 fresh sprigs rosemary, stems removed
2 c. brown sugar
3 c. apple cider or apple juice
2 whole oranges, cut into quarters
1 turkey
