I make these, but I use ground lamb seasoned like a gyro, and top with lettuce, sliced Cherry tomatoes , feta cheese and tzatziki, they’re incredible

Love these! I actually don’t buy ground beef at all anymore. My local Costco alternates between Prime brisket for $3.99/lb. and Choice brisket for $2.99/lb. if they have prime, I separate the point and flat, and grind the point (young boys don’t like the fattier meat.) then I smoke the flat and prepare like normal. For the Choice brisket, I just trim and grind the whole thing. Can’t beat $2.99/lb. ground brisket meat! ❤

Walton's has an interesting grinder attachment called the One Shot. It allows you to do a rough and final grind in one pass. Pretty slick. I'm definitely going to be trying these tacos. Been on my radar for a while but your recipes have never let me down.

Awesome. I do not know why I do not grind my own meat. 80/20 ground beef was $6.00 lb. I saw brisket at $3.00 lb. I did not even check the wholesale place I shop.

Yeah. Can't go wrong with this. Only way to improve would be to use wagyu beef tallow in the tortillas and figure out a way to work in a bacon weave. Oh, and homemade pickles.

I think you should've incorporated the onion when you cooked. Like the Oklahoma smash burger. Which is not true Oklahoma smash burger. They take the credit. But it was actually started in Kansas. In 1922. A place called Cozy Inn. They just celebrated their 100 year anniversary last year. They been making a smash burger slider for 100 years. Long before Oklahoma laid claim. They were also in several food magazines as in the top 50 hamburger joints in America. They have many plaques hanging on their wall. Another company that ties to lay claim is White Castle. They don't even come close to Cozy burgers. Lol

Make sure your meat is cold when grinding, like 34 or 35 degrees. I'm just starting to get into craft sausage etc... watch two guys and a cooler on youtube. Wealth of knowledge. These look fantastic by the way!

you can trim up and smoke just as a half, or keep cutting and grind it into other recipes, but i was surprised the way he cut that too. I figured he was going to trim the brisket to smoke and then grind the trimmings like he has talked about in some of his other brisket videos.
