To add another layer of flavor to biscuits and gravy the season sauce, “Red Hot” or “Tabasco” is added. This adds a hit of heat to cut through the creaminess of the gravy. Biscuits and gravy aren’t necessarily the easiest for a novice chef to pull off well (for instance if you aren’t used to making gravy you can end up with flour lumps or burn it), but anyone with experience baking or the willingness to do a couple of poor attempts while getting it figured out could certainly make them from scratch and you’d have all the ingredients readily available in the UK.

I dunno bechamel is a french sauce that's pretty common in the UK, and that's basically what White Gravy is (don't tell my southern family). The only thing that MIGHT hold you back from making it is getting the right kind of breakfast sausage (the sage heavy kind). Even turkey breakfast sausage works (again, dont tell my family, i've even served it to them without them knowing) Just cook up the sausage like you would mince. Breaking it down into really small chunks. Remove the sausage and separate the solids and the fat into different containers. I usually eyeball this part, but classically, the ratio for bechamel is 6Tbsp fat (usually butter, but if you didnt burn your sausage, the fat from it works great), 3Tbsp flour, 2 cups of milk. Wisk JUST the fat and flour together on MEDIUM heat (this is the step that screws everyone up, you dont want it to be too hot, or you'll just burn your flour, you can reuse the same pan you cooked the sausage in without cleaning it out IF nothing burned). For me it takes about 6-7 minutes on my stove to get to the right kind of golden color. You dont want it yellow, and you dont want it brown. Patience will be rewarded. While you're doing that warm your milk in the microwave. About a minute on high is fine, it just SHOULD NOT be COLD. Once your roux (the flour and fat) is the right color add about 1/4 cup (just heavy splash) of your milk and wisk VIGEROUSLY for 1-2 minutes, then add the rest of your milk and continue wisking until it's smooth. Then you can add your sausage back, and season HEAVILY with kosher salt and fresh cracked pepper. KEEP TASTING. If it tastes bland, that's because you didnt add enough salt. Ladle over american-style biscuits split in half, and you're good to go. I'll admit, 99% of the time, I don't make my own biscuits, but that 1%, I use the "Cream Biscuit" recipe from Spruce Eats.

If you want to replicate biscuits and gravy here are a few tips. Order some White Lily flour from the US. It’s different than regular flour because it’s milled from 100 percent soft red winter wheat, and has a lower protein and gluten content. Next don’t over mix the dough when you’re making it, it will result in hard biscuits. You’ll want to use a large mixing bowl, and combine the flour, baking powder, baking soda and salt first. Then using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. You’ll want to do this quickly so the butter and shortening doesn’t start to melt. Then make a depression in the center of the dough and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky. Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, you can also use a drinking glass, being sure to push straight down through the dough. Do not twist the cutter or glass! Push straight down and the pull straight back up, it’s okay if you have to loosen the edges to release it if you’ve used a glass. Place biscuits on baking sheet so that they just touch. Take the remaining scraps of of dough and reshape it into a one inch thick round. Work it as little as possible and continue cutting until you’ve used all the dough. Then bake at 450° F (230° C/gas mark 8) for about 15 - 20 minutes, or until the tops are a light golden color.

Biscuits and gravy is one of the best food items, but everyone is different. You have to use the right sausage, and the gravy is basically made out of the left over grease from frying the sausage. While sausage is frying chop it up into smaller bits. When sausage is done throw some flour in the pan and mix it around until it makes a nice paste, pour some milk in the pan while constantly whisking so it doesn't scold, add black pepper, once thickened pour over the biscuits, real easy to do.

The Southern biscuit and British scone may share passing resemblance, but the flavors and textures make them very different. A good biscuit has a lovely golden exterior with a light crunch and inside it's fluffy and savory. I love to make good buttermilk biscuits for breakfast especially, but sometimes for dinner too depending on the meal. Also love to take breakfast sausage for patties and brown any extra sausage left after into crumbles to flavor a gravy. When I was younger my parents sometimes liked to split and butter their biscuits and drizzle them with Yellow Label syrup.

There are a couple of KZitem channels I've seen that've done 'first tries' of Biscuits and Gravy with demonstrations of them actually making the dish. @mrbarrylewis I think does the better job on the gravy (he makes the wise move of both doing nice crispy bacon AND properly seasoned country sausage for it), while @PatrolNation actually does the better biscuits (he freezes and grates the butter in with the flour and keeps it cold cold cold so you get little buttery pockets in the dough, and he puts his dough through a 'fold it and roll it back out' process a good five times that helps the biscuits get nice soft layers inside, and a good crisp exterior). Might also take some inspiration from Babish's Basics episode on Biscuits and Gravy. Looking to them and a couple recipes for 'Southern biscuits and sausage gravy', you could probably knock together a pretty solid rendition of biscuits and gravy for yourself in your own kitchen rather than hoping a takeout joint will have you covered.

If you make biscuits, don't over mix them. You want them flakey, more you handle the dough the tougher they get. If you want to make sausage gravy it is so easy. Just brown ground sausage in your skillet, drain off the grease, stir in the flour. When the flour is not visible any more slowly add the milk. It will be lumpy at first but just keep stirring and adding milk until it is thick and not in clumps. You control how spicy it is by how spicy your sausage is. Don't add salt or it will be way to salty. Enjoy!!!

Southern sweet tea is a whole thing. It's not the only tea the US goes to (and if we're thinking of plain old 'tea' what we picture is probably pretty close to the classic British cuppa), but if you go pretty much anywhere in the south and ask for Sweet Tea, you're going to get something cold in a tall glass that's been well steeped, heavily sweetened, and MAYBE has a bit of lemon in it, but not even a hint of milk.

Papa Grim's Badass Biscuits 2-1/2 c flour (cake flour preferred) 1 T baking powder (NOT baking soda) 1/4 t baking soda (NOT baking powder) 1/2 t salt (can be cut in half) 1/3 c liquid fat (veg oil, melted lard or Drippins, etc) 3/4 c milk (slightly sour is OK) preheat oven to 450f blend all dry ingredients blend all wet ingredients mix wet into dry only enough to bring them together. DO NOT OVERMIX! drop fat golf balls with 2 spoons, or roll & cut (personally, i prefer drop Biscuits) bake 10 to 12 minutes ===== METRIC UNITS : 600 ml flour 15 ml baking powder 1.5 ml baking soda 3 ml salt 80 ml liquid fat 180 ml milk oven at 230c for Gravy : throw some seasoned loose pork breakfast sausage into a pan (for more Gravy, add a little Drippins or oil to the pan) cook it until it's about 2/3 done and break it into small bite-sized pieces slowly add flour to the pan until it coats all the meat bits and the pan is starting to think about drying up stir constantly until the flour starts losing it's "raw" smell turn the heat down to LOW any oil+flour in the pan should be really thick, breaking up when stirred, but liquid when left alone start stirring constantly and begin adding cream and/or sweet milk until the sausage bits are just barely covered keep stirring if the gravy is getting too thick, too fast, don't be afraid to add more cream. it's a balancing act. keep stirring keep stirring some more as the Gravy starts to thicken, adjust the salt and pepper to your liking when you think that maybe you've added too much pepper, give it 4 more grinds keep stirring when the Gravy is NEARLY as thick as you want it, take it off the heat the Gravy will thicken just a bit more after it's off the stove this Gravy is good on Biscuits, chicken fried steak, mashed potatoes, and many other things. personally, i've never seen it happen, but i have heard there is sometimes leftover Gravy. if there happens to be some left over, it should be put into the fridge, covered. if you want my recipe for breakfast sausage seasoning, just let me know. one batch handles 2 pounds (about 900g) of ground pork A NOTE ON "DRIPPINS" Drippins is the FAT (not liquids!) left over after cooking bacon (or sometimes a really good ham). this substance is kept in a jar either in the refrigerator if not much is produced and used, or near the stove if you have a good rotating supply. this stuff is jealously kept, lovingly dispensed, and joyously consumed with such diverse things as cooked vegetables, beans, wilted spinach greens, as a component of some salad dressings, in/on burgers, roasts, chops, etc. if you go into a functioning Southern kitchen, you will find Drippins.

Dude how can you compare a meal where you simply open a can of beans and pour them over toasted bread with one where you have to mix fresh ingredients and bake the biscuits, and then prepare the sausage gravy with real meat, proper seasoning, fresh butter and cream? I don't see how there is a comparison. I don't mean this as an insult, but we always regarded beans (except at a BBQ) as a food for poor people and would never consider eating them as a meal the way it is done in the UK. I'm not sure if this is a universal feeling nationwide but it definitely was in my corner of California. I know you Brits went through some tough times during WW2 and even had to ration food. So dump the beans on toast, yeast extract (marmite) and blood pudding (made with pork blood). That shit is gross!

biscuits and sausage gravy is made with an English scone that is flakier and fluffier than a regular English scone and the sauce is made with ground sausage cooked then you add the flour milk and black pepper this makes it a roux A roux is a combination of flour and fat which is commonly used as a thickening agent in cooking stews and sauces. A roux can also be used as a base for various Classical French sauces, such as Bechamel or Velouté. To make a roux the fat is melted and an equal part of flour is stirred into the fat until incorporated.
@dalehammers4425

Its not accurate to call biscuits flakier scones, they literally have different ingredients. Only 1 difference but it makes all the difference. Well technically 2 with the amount of butter.
@kiekie84
Жыл бұрын
@@dalehammers4425 if we can generalize it then it is like a flakier scone like you know a lemon cookie vs a butter cookie vs a sugar cookie it's, all the same, it's just one has more butter one has more sugar and one has lemon and then, of course, the texture is sometimes different as far as one cookie being softer or one being flakier I mean yes technically they all have different ingredients but if someones never had a sugar cookie or a lemon cookie and they've only had a butter cookie then I think it is ok to use the butter cookie as a point of reference for the other two cookies so I used the word flakier scone as a point of reference to describe our biscuits but yeah I get what your saying and technically your right but eh w/e it is what it is

Yeah, they seem to have somewhat bland sausage there, especially compared to our typical breakfast sausage. I'd say adding a bit of sage and cayenne pepper would at least approximate our sausage. OK, here's a quick recipe for both the Biscuits and Gravy. For tge Biscuits, you mix some cold butter in with flour, baking soda, baking powder, a bit of salt, and butter milk. You mash all this up until you start getting a dough texture. Then you take the dough out of the bowl, and you start kneeding it and folding it. Folding it over and over gets you the layers in the final product. Once you get're ready, you cut the dough into circular chunks...you can use a glass for this. Then you place all these circular patties of dough onto a baking pan, somewhat close together, and then you bake them. For the gravy, you brown up some minced sausage, then add in a bit of flour, stir that up until the flour is coating the sausage and you start getting the beginnings of a Gravy, and then you add in milk until you get the consistency you want for your gravy. You can add in a bit of course ground pepper if you like as well. I like mine, somewhat runny, but not too bad. And tyen when you eat it, be sure to split the biscuits in half...horizontally, so that the gravy can soak into the soft fluffy biscuit. But yeah, the dish doesn't look all that great, but it smells and tastes wonderfully. The flavor comes from the sausage in the gravy. It's so good. White gravy can also be used as a dipping sauce for chicken strips and a covering for country fried steak or chicken. Oh, for mashed potatoes too.

I personally do not knead or fold the dough as it can cause the biscuits to become tough. They’re a quick bread for a reason. Once it becomes a shaggy dough I dump it on to a floured surface and MAYBE knead for 0.5 seconds and then flatten to 3/4”-1” thick and cut. I have perfect biscuits every time. And I even take the remainder and cut one or two extra biscuits and never have a tough or dense biscuit always fluffy and flaky
