As a traditional UK brewer working with British & northern European styles, this is the kind of beer I'd try but hide from untappd so my managers don't see it! Love a cheeky west or east coast IPA, but I'd love to see something like this around me! Craft bars around Birmingham tend towards fruited sours, milk stouts and your classic west coast US hoppy pales

I'd be interested to see if there is any difference in your beer with the same recipe minus the thiol powder. I recently listened to a brulosophy episode on thiols and they tried out the thiol boosting enzyme as well.

I've brewed a beer with that enzyme in before based on a line in the new IPA book. The malt miller in the uk sell it as "aromazyme" and I think it's also from wine uses. Not to burst your bubble 😉

Local brewery has this on their list since they opened. FLORIVANA A unique beer/wine hybrid. A Hazy IPA heavily whirl-pooled with Phantasm (White Marlborough Sauv Blanc Grapes from New Zealand), Cascade, Strata & Mosaic CRYO.

Pitching with Omega cosmic punch yeast should have utilised some more of those thiols getting a very intense aroma and flavour, then perhaps pitching with a West coast style yeast to get that finish dryness.

They also have another yeast called Star Party that is more west coast oriented but is also modified the same way cosmic punch is. Also putting hops in your mash helps with the Thiols as well.

Is this recipe really for 10.5 gallons ? I find OG around 1.030 when I put it in brewfather. Also, you mention about dry hopping with Simcoe , how much of it you added ?

If you are gonna be using hop oil anyways, whats the point of using thiol boosting enzymes or dry hopping to begin with? Sometimes I am happy we have the Reinheitsgebot in germany so at least you know the beers you drink are legit
