Pro tip: Put the onions in the pan first, then the beef, which you'll want sliced thinner. And if you cover the pan, the cheese will melt faster and the beef won't cook quite so much. Also, toast the roll in a little garlic butter, and I like to season my beef with salt, pepper AND a little oregano. :)

Yeah, in the US (in general) we put many of the seasonings in the pan first and let it "burn". Then put just a little on afterwards, once the food is in it.

@@timesthree5757 that would be ok if you removed the meat and used to water from the onions and peppers to deglaze the pan. If you leave the beef in at that point then the sear will “wash off” and you’re basically simmering already cooked meat.

If you put the rib eye in the freezer for a bit to firm it up, you'll find it easier to make thinner cuts. Also add the onions first as you want them to caramelize a bit.

Don't ever be afraid of just opening your sandwich and adding a bit of salt and pepper even once you have taken a bite! You don't have to add spice only while it is in the pan, if it needs more spice just add it!

Native Philadelphian here: You did very well for a first attempt! I agree with the other comments that say to caramelize the onions first. For your next time, I would either get the meat thinly sliced at the butcher, or chop it as you cook it. (you can chop the onions too) To melt the cheese you can mix it with the meat as you did or put the roll over the meat and cheese combo and then slide the spatula under everything and flip it onto the plate. But overall, you did great!! Well enough in fact to make my husband want a cheesesteak for dinner. LOL 😄

Sautee the onions first and always grill the bread with butter. Takes the flavor to another level. Add garlic powder and onion powder when seasoning with salt and pepper. I also like to add green bell pepper (and red if I have it). I personally just add the cheese on top and let it melt right before I take the meat off the grill. I don't mix it in. That's just me! 😁😋

That’s basically what I do. Yes onions first or at least remove the meat if you want to cook the onions and peppers second. Bread in the oven and the oven is already hot so I place the cheese on top when everything is done in the pan and broil it really quick to melt on top. No mixing.

Always always always cook the onion first. They are filled with water and you will just end up boiling your mean. OR cook them in a separate pan and add after. Same with other veges. Meat needs HIGH heat to sear them.

Salt and pepper can be added at the beginning when you first put it in the skillet. This will help marry the spices into the meat whilst it cooks. You did great Mrs H. Mr H is full of appreciation for your cooking. 😍 another awesome video!

i've found though, that if you fry something with black pepper at too high a temperature, it can get a bitterness to it. so personally, i prefer to not pre-pepper (a lot of p's in that word, pre-pepper.) something if it is to be cooked via frying. but in the end, personal choice. also a side-note... an ex of mine (a chemist) did her doctorate thesis on piperidine (the "pepper taste" in black pepper) and it's interactions with nitrates/nitrites. she discovered that these -- when heated together -- produce carcinogenic compounds. to this day, she refuses to eat (for example) bacon that is peppered *_before_* it it cooked. though she will consume post-cooking peppered bacon with great relish.

If you slightly freeze the meat, you will be able to slice it ultra thin,as it should be. Plus saute onions first in pan for tons of flavor. We love Philly Cheese Steak here in NYC, too. Looks 😋 yummy.

I put mushrooms and peppers on mine, too, and I use a special type of parmaean and make a sauce with it and pour it over the meat and vegetables once they're in the bun. I toast French bread buns to put it one. I'm not from Philly, but I've had the original sandwiches and loved them. Which put me on a path to get the recipes so I could make them myself. I ran across this recipe, and it wasn't a true "original Philly cheese steak" sandwich, but it looked good, and wholly crap, took it up to a whole other level.

I was born in Philly and now live in South(ern New) Jersey, just 45 minutes from the city. The area is known as the Delaware Valley because of the Delaware River. And yes, a true Philly cheesesteak does not have peppers on it.

It's really up to the eater's choice whether to add bell peppers but most of these sandwiches come with it if you order it from a resterurant unless you tell them not too add them.

I agree with buttering and toasting the bun. The cheese is not put in the frying pan but on top of the bun after first doing the onions, (optional peppers), in the pan, then the meat. I also like mayo on the bun.

As someone from the Philly area I can say, that actually looks pretty tasty. Nicely overstuffed. I do not eat onions, and I prefer provalone cheese but, you did it right with the cheese, get it all melty in with the meat and it makes it nice and moist and juicy. Well done. Other than the onions for me, I would 100% eat that sandwich Mrs H.

Usually you want to use two metal spatulas and chop it up while cooking. That keeps the bites small and not tough.

You can add Peppers (and even Mushrooms (Cooked in the Steak juice left over). It's all about how YOU like them! For a slight "Kick", a Large Pickled Jalapeno on the side hits the spot! Personally, I don't consider it a True Philly Steak unless you have a Beer to wash it down with... but that's just "the Yank in me".

Me too. I don't let the cheese melt into the meat like that either. I just lay it over the meat, let the cheese melt a bit or put a lid on it for a couple minutes just until it's melty. Then put it in roll. Always toast the roll on the grill or in the oven for a bit. No cold bread. Oftentimes I add slices of sauteed mushrooms. Not the traditional version but in my opinion it's better. Adds more flavor.

To cut steak really thin it helps to freeze it for an hour first so it doesn't squish while you cut. You can also use it on a mandolin.

Philly native here (all 55 years): - Using ribeye: YES! That's perfect. Many fake restaurants use sirloin or other cheaper cuts. - It HAS to be shaved ribeye. Seems like you had some limitations there, which is understandable, but shaved makes a difference. - Ribeye, onions and cheese is absolutely correct (I prefer American cheese). No peppers needed for a traditional Philly cheesesteak, although they aren't going to ruin anything. - Adding a bit of garlic salt or onion salt to the ribeye is a secret key. - The roll is critically important, and worth splurging on.

99% of places here are using a non descript cut of chip steak or sir loin as long as its thin enough its fine and it will be the tender mush of meat and cheese we love using ribeye is not that important, were over cooking the meat anyway, bragging about ribeye on a cheesesteak is like the ritz in philly making a filet mignon cheesesteak with truffle oil (not a cheesesteak)

Pro tip: season your sliced beef and onions with salt pepper and garlic powder. Will make it taste so much better and toast your bread in the oven before putting the layer of meaty oniony cheesy goodness on your bread. So hungry now! Peppers and sliced fresh mushrooms are good additions as well! But definitely not a must. Also browning the meat, removing it from the pan, and browning the onions. Once the onions have cooked adding the meat back to the pan. Makes it taste better too!

I love that you use an iron skillet. Used one my whole life and never had an iron deficiency, Born and bred in California, I have lived all over the USA and am now married to a Belgian and live there with him. I think it's great that you guys love the USA and are so willing to try nearly anything and that you are actually traveling there soon. I love your enthusiasm and just hope you aren't disappointed. I am disheartened as is most of my siblings that still live there with the State of the Union there. It's a shadow of what it once was. What I love the most is that you are willing to try and if the rest of the world was as willing as you are to learn about other countries the world would be a better place. You guys are truly cute!!!

There is a popular video on KZitem of D'Alessandro's steak shop in Philadelphia. The manager has a demonstration. I lived in Philadelphia and attended university in the suburbs. I have been to several of the top cheeseteak restaurants, including D'Alessandro's. (Pat's Steaks and Genos are two of the oldest, but they are more of a tourist location right now). Just a point of information for next time, place the ribeye in the freezer for 30 minutes or until . It will be easier to slice thinly (use a sharp knife). In Philadelphia, it is popular to add hot cherry peppers or Italian dried chili peppers, but it is a personal preference. Also, let the cheese melt slightly and flip the steak inside the bread/roll (you will avoid melted cheese gumming up your spatula). Prep/chop onion before adding. Careful not to crowd the pan, or you will wind up steaming the steak. 😊

Couple comments: First, I was born and grew up in South Jersey. About 10-15 miles outside of Philadelphia and honestly I have had better cheesesteaks in Southern NJ then I have in Philly but I know Philadelphians are passionate about their cheesesteaks. First thing.. The steak has to be cut very thin, The thinner the better. I hate going to other States and restaurants where they tout a Philly Cheesesteak and it's literally a hunk of steak in a sub roll. That is NOT a Philly Cheesesteak. So the thinner you can slice the steak the better. You can go to your butcher and ask them if they would cut your meat like "Chip Steak". Next, it would be better if you diced your onions into small pieces and then cook them separately for a few mins to caramelize them. Then add the caramelized onion directly to the sandwich when you are putting it all together. The roll makes the whole sandwich come together so always try to get fresh soft Italian sub rolls or what we call hoagie rolls. Add the cheese last, on top of everything in the roll. We would slowly melt the cheese, again separately and then poor the semi-liquid cheese onto the cheesesteak after putting in the meat and the onions. You can also top your cheesesteak with catsup or mustard or just about any other type of sauce. Steak Sauce, BBQ Sauce, etc I like a soft roll but some people like to heat their roll a little in the oven. It's all personal preference.

Next time put the steak into the freezer for a bit. Then thinly slice it while it is still pretty cold. Then finish defrosting, before cooking. Once you put your cheese on, turn off the heat, cover the pan and let the residual heat melt the cheese.

Philadelphia born and raised and “chip steak” is key. It’s much thinner, like paper thin. I don’t know if it’s available in the UK. DICED carmelized onions fits better on the roll and are mixed thru w/ every bite of meat. Also, yes season the meat first salt and pepper very well. I’d say at least 50% people Mayo the roll and ketchup on top. Some people add pickles or hot peppers or all of the above. Green pepper are typically not on a traditional cheesesteak. Sooooo glad you did not use cheese whiz or cheese sauce. That is not how most people eat their cheesesteaks. Mostly tourists who’ve been misguided and told to go to Geno’s or Pat’s arguably the worst cheesesteaks in the city!!!! FYI the roll is just that, a roll. You’ll hear it referred to as a hoagie or cheesesteak roll, but a hoagie is actually a “cold”sandwich which a lot people refer to as a sub. But in Philly it’s a hoagie 😂!!! Only subway makes subs and they’re trash compared to a real hoagie on an Amoroso roll. Amoroso is a local company who was the big supplier/bakery of those rolls. So you’ll here people refer to those specifically. Looks pretty good 👍🏾 and when I make cheesesteaks at home it’s up to your creativity. Good job Mrs. H! I always under-salt my food, because you can always add more, after plating. Some like less salt, some more. (I think Baby H was asking for a taste. She is so cute!) ❤

Cheese Wiz, green peppers, garlic powder and a bit of white pepper and you will be in cheesesteak heaven!! I'm a savage so instead of Cheese Wiz, I use jalapeno cheddar chip dip. It's a wonderful flavor and texture to add!

I am a Philly native & I hope u come to Philly and see one actually made. The meat has to be paper thin(we call it shaved steak)so that when you're cooking it, you're chopping up the meat & onions together. If u like sweet peppers or hot peppers, they get chopped up in the steak as well. When it's all chopped up nicely & shaped like the hoagie roll, place whatever type of cheese you like on top, let it melt somewhat by covering it with the pan's lid(for 30 sec or less)then place the opened roll on top, smash it down a bit so the cheese sticks to the roll, then flip the whole thing over using a long spatula, or wide type of knife. Put on your condiments and enjoy! I like ketchup & mustard on mine.

Another pro tip- butter the inside of the bun (roll) and toast it butter side down in a pan (like a grilled cheese) before putting in the philly meat. Hubby makes them everyday.

Yes, absolutely add the peppers! At the end of the day, it’s all about flavor and the peppers do give it an amazing flavor!

You guys are so cool and your daughter is just adorable. Just as a hint for thin slices I like to freeze the steaks and then use a mandolin slicer. They are not expensive and slices really thin.

Great job Mrs H. I have to ask, do you have an itinerary for your trip yet? I think you need to come see the Mall of America in Minnesota. That would be cool.

Would be better if Elana was older so she could appreciate it. To me that would be a trip for another visit. We had a couple malls in my city with lots of rides for kids (Mall of America makes them look like barbie doll toys). It was a blast taking my grandkids regularly to just ride all on the rides and then have a bite to eat, they didn't fully enjoy it until they were about four. But I do recommend Minnesota & the Mall of America. Just not in the winter, lol.
